cooking spray
1 (12 ounce) bag dark chocolate chips
1 (12 ounce) bag milk chocolate chips
1 (14 ounce) can sweetened condensed milk
¼ cup Baileys® Irish Cream
1 ½ cups lightly toasted Piedmont hazelnuts, chopped, divided
½ cup currants
flaky sea salt

Steps:

  • Grease two 3-inch loaf pans with cooking spray.
  • Place all chocolate chips and sweetened condensed milk into a large pot and cook over low heat, stirring until melted. Remove from heat and add in the Baileys. Stir until smooth and add in 1 cup hazelnuts and currants.
  • Divvy the fudge between two 3-inch loaf pans. Sprinkle the tops with flaky sea salt and remaining 1/2 cup hazelnuts. Let fudge set at room temperature.
  • Once set, remove from the pans, slice thinly, and serve on vintage plates.

Favourite Nuts may be added, thinned with a little cream it can be changed into a sauce to top Ice Cream or used as a frosting, endless uses. Enjoy

375 g condensed milk
3 1/2 cups chocolate chips
1/3 cup Baileys Irish Cream

Steps:

  • Line a 12x6 bar pan or slice pan with baking paper.
  • Heat the condensed milk carefully.
  • Melt the chocolate in a microwave 30 second bursts, stirring after each burst so it doesn't burn. Add to the condensed milk and then mix in Baileys.
  • Pour into your lined bar pan and set--leave to cool at room temp or if very warm were you live pop into the fridge to set.
  • Cut into pieces and watch it disappear.
  • We serve at the cafe with hot chocolate and moccachino--great gift wrapped and given for presents.

3/4 c margarine or butter
3 c sugar
3/4 c evaporated milk
1/3 c Baileys Irish cream
1 Tbsp instant coffee crystals
7 oz jar marshmallow cream
1 pkg vanilla morsels or butterscotch chips, 11 oz
1 tsp vanilla extract

Steps:

  • 1. In a small bowl, combine Baileys and coffee crystals. Microwave on high for 10 seconds or until melted and dissolved.
  • 2. In a medium saucepan, over medium heat, melt butter, evaporated milk, sugar, and marshmallow cream.
  • 3. Slowly add the Baileys coffee mixture; stir well.
  • 4. Boil for 5 mins.
  • 5. Remove from heat. Stir in chips and vanilla extract. Stir for approx. 3-4 mins until smooth.
  • 6. Pour into a foil lined 8x8" pan. Chill to set.

This recipe is not for the wee leprechauns. But, the older leprechauns are sure to enjoy this recipe! The fudge is easy to prepare and turns out super creamy.

BAILEY'S IRISH CREAM FUDGE
24 oz milk chocolate chips ( 2 - 12 oz pkgs)
12 oz semi-sweet chocolate chips
14 oz marshmallow cream
2 tsp vanilla extract
2/3 c Baileys Irish cream
4-1/2 c granulated sugar
12 oz evaporated milk
1/2 lb butter or margarine

Steps:

  • 1. In a very large bowl, combine the milk chocolate chips, semi-sweet chips, marshmallow cream, vanilla, and Baileys Irish Cream. Set aside.
  • 2. Line a 10x15" baking pan with foil. Lightly spray with cooking spray.
  • 3. In a medium saucepan, combine granulated sugar, evaporated milk, and butter. Bring to a gentle boil over medium heat. Cook slowly and stir constantly for 10 minutes.
  • 4. Pour the hot mixture into the bowl with the chips. Stir slowly by hand to combine. It is important to do this step by hand NOT with a mixer. Stir for approx. 2-3 minutes.
  • 5. Pour fudge into greased pan and chill to set.

Tips:

  • Use a heavy-bottomed saucepan to prevent the fudge from burning.
  • Stir the fudge constantly to prevent it from scorching.
  • Use a candy thermometer to ensure that the fudge reaches the correct temperature (235°F).
  • If you don't have a candy thermometer, you can test the fudge by dropping a small amount into a glass of cold water. If the fudge forms a soft ball, it is ready.
  • Pour the fudge onto a greased baking sheet and let it cool completely before cutting it into pieces.
  • If you want to make chocolate fudge, add 1/2 cup of semisweet chocolate chips to the fudge mixture.
  • If you want to make peanut butter fudge, add 1/2 cup of peanut butter to the fudge mixture.
  • For a boozy twist, add 1/4 cup of Bailey's Irish Cream to the fudge mixture.
