2 pounds ground chicken
¼ cup chopped fresh cilantro
1 ½ teaspoons adobo seasoning (such as Goya®)
1 teaspoon ground cumin
½ teaspoon Mexican seasoning mix (such as Goya® Sazonador Total)
8 slices pepper Jack cheese
1 avocado, sliced
8 tablespoons Mexican-style sour cream, or to taste
8 hamburger buns, split

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Slice 1/2 of the jalapeno pepper, 1/2 of the bell pepper, and 1/2 of the onion into rings for topping. Set aside.
  • Combine ground chicken and cilantro in the bowl of a food processor; season with adobo seasoning, cumin, and Mexican seasoning. Add remaining peppers and onion. Pulse until mixture is combined. Shape into 8 burgers.

6 ounces fresh chorizo
Kosher salt and freshly ground black pepper
1 jalapeno, minced
6 ounces mayonnaise
8 ounces roma tomato, diced
1/2 red onion, minced
1 bunch fresh cilantro, roughly chopped
2 limes, juiced
Cayenne pepper
4 slices jalapeno jack cheese
4 hamburger buns
4 bib lettuce leaves

Steps:

  • Preheat the grill to medium-high heat.
  • Mix together the beef and chorizo, sprinkling with salt and pepper. Form 4 patties, each around 6 ounces.

1-1/2 cups KRAFT 2% Milk Shredded Cheddar Cheese

Steps:

  • PREHEAT oven to 400 degrees F. Spray large skillet with cooking spray. Add chicken; cook on medium heat until chicken is cooked through, stirring occasionally. Stir in salsa. Reduce heat to medium-low; simmer 5 min.

This is my version of a recipe that was used at our Mexican station at work. Originally it included peeled and diced tomatoes, oranges and limes. I reworked it to save labor and time.

1/2 cup vegetable oil
1/4 cup orange juice
1 lime, juice of
1 lemon, juice of
1 cup tomato puree
1/8 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon cumin
1/8 teaspoon chili powder
1/8 teaspoon cinnamon
1/8 teaspoon garlic powder
1/8 teaspoon jalapeno powder (if not available use crushed red pepper)
1 lb boneless chicken thighs

Steps:

  • mix all ingredients except chicken in a bowl.
  • add chicken and let marinate 24 - 48 hours.
  • take chicken out of marinade and place in a 9x13 baking dish.
  • bake uncovered in a 425 degree F oven for 30 minutes.
  • cover and bake at 325 degrees F for 30 more minutes.
  • while still warm place in a mixer and slowly beat with paddle to shred or shred by hand when cool enough to do so.
  • serve over rice or wrapped in a tortilla.
  • Alternate cooking method using a grill.
  • reserve 1/3 of marinade.
  • mix chicken into the rest of marinade.
  • marinate 24 - 48 hours.
  • cook the chicken on a grill until outside is slightly blackened.
  • put in a 9x13 pan
  • add the reserved marinade.
  • cover and bake at 325 degrees F for 30 minutes.
  • shred as described above.

Spicy from hot red-pepper flakes and crisp from a mix of oil and seasoned flour, this chicken dish is inspired by a chef cooking at a Barbados restaurant. One guest, he wrote, "mistakenly assumed that the chicken had been deep-fried Southern style." Instead, it was baked, as it is here, yielding a crisp skin without nearly as much oil.

1 chicken, 3 pounds, cut into serving pieces
Salt to taste, if desired
Freshly ground pepper to taste
1/2 teaspoon oregano
2 tablespoons peanut, vegetable or corn oil
3/4 cup flour
1/2 teaspoon paprika
1/4 teaspoon dried hot red pepper flakes

Steps:

  • Heat the oven to 450 degrees. To prepare this dish properly, partly bone chicken, leaving legs and thighs attached. Bone thighs first by place them skin side down on a flat surface. Using small paring or boning knife, scrape meat away from each bone. Sever bone to separate it from leg bone. To bone legs, scrape around the bone almost but not down to the end. Using sharp, heavy knife, cut off major part of bone, leaving about one inch at end. Chop off very bottom of each leg bone.
  • Leave breasts and main wing bones attached. Cut off and discard tip of each wing. Cut off and set aside second wing joints. Bone breasts but leave skin intact. Do not remove main wing bone. Use back bone for soup or discard.
  • Sprinkle chicken with salt, pepper and half of oregano.
  • Put oil in baking dish large enough to hold chicken in one layer when it is added. Add chicken and rub it in oil.
  • Blend flour with remaining oregano, paprika, hot red pepper flakes, salt and pepper.
  • Dredge each piece of chicken on all sides in flour mixture. Shake off excess.
  • Return chicken pieces skin side up to baking dish.
  • Place chicken in oven and bake 40 minutes without turning.

1 lb lean ground beef
1 onion, chopped
2 stalks celery, chopped

1 egg
3/4 cup milk
1/4 teaspoon salt
1 cup shredded sharp processed American cheese

Steps:

  • Preheat oven to 350 degrees.
  • Toast the bread until golden, then spread both sides of the toast lightly with butter.
