  • notes
  • Great for freezing! See our Freezer Tips on pages 23-27.
  • Vegetarian friendly!
  • End up with extra Gorgonzola? Put it to good use! Sandy loves to stuff it into a fresh fig, then wrap the fig in a very thin slice of prosciutto. Voilà! A sophisticated garnish for a salad or an easy appetizer for your next cocktail party.

Tips:

  • Use a large pot to boil the spaghetti to prevent overcrowding and ensure even cooking.
  • Salt the boiling water generously; this adds flavor to the pasta.
  • Cook the spaghetti al dente, meaning it should be tender but still have a slight bite to it.
  • Reserve some of the pasta cooking water to add to the sauce; this helps create a creamy and flavorful sauce.
  • Use a variety of cheeses in the sauce to create a rich and complex flavor.
  • Freshly grated cheeses melt more smoothly and evenly than pre-shredded cheeses.
  • Add the cheeses to the sauce gradually, stirring constantly to prevent clumping.
  • Season the sauce to taste with salt, pepper, and garlic powder.
  • Serve the spaghetti immediately, topped with additional cheese and parsley.
