0.5 17.3 ounce package frozen puff pastry sheets, thawed (1 sheet)
2 tablespoon jalapeño pepper jelly, apple jelly, or apricot jelly
2 4.5 ounce rounds Brie or Camembert cheese
2 tablespoon chopped nuts, toasted
1 egg, slightly beaten
1 tablespoon water
Apple and/or pear slices

Steps:

  • Preheat oven to 400°F. Grease a baking sheet; set aside. Unfold pastry onto a lightly floured surface; roll into a 16x10-inch rectangle. Cut into two 8-inch circles; reserve trimmings.
  • Spread jelly over top of each cheese round. Sprinkle with nuts; lightly press nuts into jelly.
  • Combine egg and water; set aside. Place pastry circles over cheese rounds. Invert cheese and pastry. Brush edges of circles with a little of the egg mixture. Bring edges of pastry up and over cheese rounds, pleating and pinching edges to cover and seal. Trim excess pastry. Place rounds, smooth sides up, on prepared baking sheet. Brush egg mixture over tops and sides. Cut small slits for steam to escape. Using hors d'oeuvre cutters, cut shapes from reserved pastry. Brush shapes with egg mixture; place on top of rounds.
  • Bake for 20 to 25 minutes or until pastry is deep golden brown. Let stand for 10 to 20 minutes before serving. Serve with apple and/or pear slices.

1 egg
1 tablespoon water
1 (17.3 ounce) package frozen puff pastry (such as Pepperidge Farm®), thawed
½ cup apricot preserves
¾ cup dried cranberries
½ cup sliced almonds
1 (7 inch) wheel Brie cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk egg and water together to make egg wash.
  • Roll out puff pastry gently to a 14-inch square. Trim corners with a knife or pizza cutter to make a circle. Spread apricot preserves over the pastry, leaving a 1-inch margin around the edge. Sprinkle cranberries and almonds over the pastry, and place Brie cheese in the center.
  • Brush the edges of the pastry with some of the egg wash. Fold top and bottom of pastry over the dough; trim 2 inches off each edge. Fold remaining pastry on top to cover the Brie cheese completely. Press the seams with your fingers to seal. Remove any excess apricot preserves that leaks out.

1 tablespoon olive oil
1 tablespoon butter
1/4 cup diced onion
1 tablespoon minced fresh rosemary, plus rosemary sprigs, for garnish
2 teaspoons minced fresh thyme
2 cloves garlic, minced
1/2 pound cremini mushrooms, sliced
Kosher salt and freshly ground black pepper
1/2 cup red wine, such as Cabernet
1 large egg
1 sheet frozen puff pastry, thawed
All-purpose flour, for dusting
One 8-ounce wheel of Brie
Dried cranberries, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment.
  • Put the olive oil and butter in a large skillet over medium-high heat. When the butter has melted and the oil is hot, add the onion, minced rosemary, thyme and garlic and stir to combine. Add the mushrooms and cook until golden, about 5 minutes. Season with a good pinch of salt and pepper, then stir. Deglaze the pan with the wine and continue to cook until the wine has reduced, about 1 minute. Set aside.
  • In a small bowl, make an egg wash by beating the egg with 1 tablespoon of cold water.
  • Lay out the puff pastry sheet on a floured surface and pile the mushrooms in the middle. Place the wheel of Brie in the center. Fold up the sides of the puff pastry to enclose the mushrooms and Brie, folding in the edges to seal. Place the wrapped Brie on the prepared sheet pan seam-side down and brush with the egg wash.
  • Bake until golden, 30 to 35 minutes. Allow to cool slightly, then top with rosemary sprigs and dried cranberries to resemble an evergreen bush with berries.

1 cup pecan halves
3/4 cup packed dark-brown sugar
All-purpose flour, for dusting
2 standard packages (17 1/4 ounces) frozen puff pastry, thawed
1 wheel (2.2 pounds) brie
1 large egg yolk
2 tablespoons heavy cream

Steps:

  • In a medium bowl, combine pecans and sugar, using your fingertips to thoroughly mix; set aside. Line a baking sheet with a Silpat (French nonstick baking mat) or parchment paper; set aside.
  • Lightly dust work surface with flour. Place 2 sheets (one box) of puff pastry on the work surface one on top of the other. Using a rolling pin, adhere the 2 pieces of the puff pastry together. Continue rolling puff pastry until it is very thin, slightly less than 1/8 inch thick. Using a pastry wheel or a sharp knife, cut the puff pastry into a 13-inch round, reserving scraps for decorating.
  • Place the brie in the center of the puff pastry. Top the brie with pecan mixture, spreading to within 1/2 inch of the edge of the cheese. Be sure to remove any sugar or nuts from the puff pastry, as they may cause holes to form during baking. Fold puff pastry up and over brie to enclose. The center of the brie will not be completely covered with pastry. Transfer to prepared baking sheet.
  • Lightly dust work surface with flour. Repeat rolling and cutting process with remaining 2 sheets of puff pastry. Drape pastry over the brie, tucking the edges under to enclose.
  • In a small bowl, combine egg yolk and cream to make an egg wash. Cut reserved scraps of puff pastry into decorative shapes. Using a pastry brush, gently brush the decorative shapes with the egg wash, and adhere to wrapped brie. Brush the wrapped brie evenly with the egg wash. Transfer to refrigerator and chill for at least 30 minutes and up to overnight.
  • Preheat oven to 400 degrees. Bake brie until golden brown and puffed, about 30 minutes. Reduce oven temperature to 350 degrees and bake until dark golden brown, 25 to 35 minutes more.

1 (13- to 16-ounce) Brie cheese round
1 package (13 ounces) Pepperidge Farm® Entertaining Quartet Distinctive Crackers

Steps:

  • Heat the oven to 400 degrees F. Beat the egg and water in a small bowl with a fork.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14-inch square. Spread the preserves on the pastry to within 2 inches of the edge. This MY tweaked version of a recipe by Paula Deen (She rocks my world!) AND, this is quite similar to the appetizer at THE CAV that we fell head over heels in LOVE with! I am often torn with brie between "rind" or NO RIND". Speaking from experience, this appetizer needs the rind, or it will simply be volcanic OOZE all over you baking sheet! So, I slice off just the TOP rind in order for the preserves and yummy toasted nuts to blend into the cheese. Also, please feel free to use ANY flavor of fruit preserve that suits your tastes. I listed apricot and strawberry because that's what I have used in the past! : >

1 sheet frozen puff pastry, pre-packaged
1 tablespoon unsalted butter
1/2 cup sliced almonds or 1/2 cup walnuts
1/4 teaspoon ground cinnamon
1/4 cup apricot preserves or 1/4 cup strawberry preserves
1 (8 ounce) brie round
1/4 cup brown sugar
1 egg, beaten
cracker, for serving

Steps:

  • Preheat oven to 375°F.
  • Defrost puff pastry for approximately 15 to 20 minutes and unfold.
  • In a saucepan, melt the butter over medium heat.
  • Saute the walnuts in the butter until golden brown, approximately 5 minutes.
  • Add the cinnamon and stir until walnuts are coated well.
  • Carefully slice the top rind ONLY off of the brie round.
  • Spread your choice of fruit preserves over the top of the brie.
  • Then place the walnut mixture on top of the Brie ad fruit and sprinkle the brown sugar over the top.
  • Lay the puff pastry out on a flat surface.
  • Place the brie in the center of the pastry.
  • Gather up the edges of the brie, pressing around the brie and gather at the top.
  • Gently squeeze together the excess dough and tie together with a piece of kitchen twine.
  • Brush the beaten egg over top and side of Brie.
  • Place Brie on a cookie sheet and bake for 20 minutes until pastry is golden brown.
  • Serve with crackers.
