Can you say SCRUMPTIOUS? This recipe comes from SkinnyTownUSA (look for them on Facebook). These patties were so easy to make, are healthy because they are baked not fried, and clean-up is a snap. I've made them several times and have even added cauliflower and shredded zucchini. They are just as yummy cold as they are hot,...

Time 45m

Number Of Ingredients 9

2 tsp olive oil
2 garlic cloves, minced
1/2 onion, diced fine
16 oz frozen broccoli, thawed, rough chop
1 c panko crumbs
1/2 c cheddar cheese, shredded
1/3 c parmesean cheese, grated
2 eggs, beaten slightly
salt and pepper

Steps:

  • 1. Preheat the oven to 400 degrees F. Line a baking sheet with foil and spray lightly with non-stick spray.
  • 2. Heat oil and saute the onions and garlic until softened. Season with salt and pepper. Set aside to cool.
  • 3. Place the thawed broccoli in a kitchen tea towel and twist each end tightly to remove any excess water. In a bowl, beat the eggs and mix in the cheeses. Give the broccoli a rough chop.
  • 4. Add the broccoli, garlic, onions and Panko crumbs to the egg/cheese mixture and mix well.
  • 5. Form patties and place on baking sheet. (The mixture has a wet consistency at this point--you don't think they will hold together, but they do.)
  • 6. Bake for 15 minutes. Flip the patties over and cook for another 15 minutes.
  • 7. ENJOY! I can see dipping these in a garlic aioli, mayo/dill or ranch dressing if one was so inclined. Great grab-n-go snacks. Note: I've also added cauliflower and/or shredded zucchini...works just as well.

Number Of Ingredients 9

2 teaspoons vegetable oil
2 cloves garlic, minced
1/2 onion, chopped
1 (12-ounce) bag frozen broccoli, defrosted
3/4 cup panko breadcrumbs
1/2 cup sharp cheddar cheese
1/3 cup parmesan cheese
2 eggs, beaten
Salt and pepper to taste

Steps:

  • Preheat the oven to 400°F. Lightly grease a baking sheet lined with aluminum foil. Heat the oil in a small pan over medium heat, add in the garlic and onions. Season with salt and pepper to taste. Sauté until onions are garlic are tender, set aside to cool. Add the broccoli to a kitchen towel. Wrap the towel around the broccoli and squeeze out the extra moisture. (That step is not as important when you use fresh broccoli, its just a way of getting all the extra moisture out of frozen broccoli, you don't want it to be real wet) Place the drained broccoli into a large bowl, add the onion and garlic and mix gently. To the same bowl, add the panko, the cheeses, eggs, and salt and pepper to taste. Mix together and form into patties, place on the prepared baking sheet. Bake in the preheated oven for 15 minutes. Flip and bake for another 15 minutes or until browned and crispy.

Flip and bake for another 15 minutes or until browned and crispy.

Tips:

  • Prepare the broccoli florets properly: Before starting, ensure the broccoli florets are clean, trimmed, and cut into small pieces. This will ensure even cooking and a consistent texture in your patties.
  • Control the amount of moisture: Broccoli naturally contains a lot of water, so it's essential to remove excess moisture before cooking. Pat the broccoli florets dry with a paper towel or use a salad spinner to extract as much water as possible. This will help the patties hold their shape better.
  • Use a food processor or blender: For a smooth and consistent texture, use a food processor or blender to chop the broccoli florets and other ingredients. This will create a fine mixture that binds well when forming the patties.
  • Choose the right binding agent: The choice of binding agent is crucial for holding the patties together. Popular options include eggs, bread crumbs, and grated Parmesan cheese. Experiment with different options to find the one that works best for your taste and dietary preferences.
  • Season and flavor: Don't be afraid to add various seasonings and flavorings to your patties. Common choices include garlic, onion, salt, pepper, and herbs like parsley or oregano. Experiment with different combinations to find the flavor profile you enjoy the most.
  • Pan-frying vs. baking: You can either pan-fry or bake the broccoli patties. Pan-frying gives you a crispy exterior and a tender interior, while baking results in a healthier, lower-fat option. Choose the cooking method that suits your preferences.

Conclusion:

Broccoli patties are a versatile and delicious dish that can be enjoyed as a main course, a side dish, or a snack. With their vibrant green color, delightful texture, and nutritional value, they are a welcome addition to any meal.
