BAKED RICE WITH CHEESE AND TOMATOES

Baked Rice With Cheese and Tomatoes image

From my favorite inherited cookbook, "Cook Like a Peasant, Eat Like a King. The cookbook is from the 70's and documents the travels of two California "foodies" traveling through Europe, eating dishes made by "peasant women" in small villages. This side dish recipe is from Switzerland. I picture it as a comforting side dish. I like the combo of the swiss cheese and parmesan (not one I'm used to seeing), highlighting the influences of neighboring Italy.

1 garlic clove, minced
2 ripe tomatoes, peeled, seeded, chopped
1 1/2 cups rice
1 teaspoon salt
1/4 teaspoon dried thyme
1 bay leaf, small
1 1/2 cups chicken broth
4 tablespoons swiss cheese, grated
3 tablespoons parmesan cheese, grated

  • Pour in the chicken broth, stirring.
  • Cover casserole, bring to a boil, and place in pre-heated oven for 15 minutes.
  • Remove cover, discard bay leaf, stir in two cheeses, and heat in the oven for 2 minutes.

Tips:

  • Ensure that all ingredients are accurately measured before cooking to achieve the best results.
  • Calico rice is typically baked in an oven at a moderate temperature. However, the baking time can vary depending on the specific recipe and the type of rice used.
  • To achieve a fluffier texture, use long-grain rice such as basmati or jasmine rice. These varieties tend to hold their shape better after cooking.
  • Cook additional ingredients like vegetables, protein, and seasonings in advance and let them cool before incorporating them into the rice mixture. This will help prevent the rice from becoming mushy.
  • If you are using frozen vegetables, thaw them properly before adding them to the rice mixture. This will help ensure even cooking.
  • Use a baking dish that is large enough to accommodate the rice mixture without overcrowding. This will allow the rice to cook evenly.
  • Cover the baking dish tightly with aluminum foil or a lid to trap steam and moisture during baking. This will help create tender and fluffy rice.
  • Once the rice is cooked, let it rest for a few minutes before serving. This will allow the flavors to meld and the rice to set.

Conclusion:

Baked calico rice is a versatile and delicious dish that can be enjoyed as a main course or a side dish. It is a great way to use up leftover rice and vegetables, and it can be easily customized to suit your tastes and preferences. With its colorful ingredients and savory flavor, calico rice is sure to be a hit at your next meal.
