1/4 cup butter, cubed
1/3 cup all-purpose flour
2 cups 2% milk

1 jar (4-1/2 ounces) sliced mushrooms, drained
TOPPING:
1 cup soft bread crumbs
1 tablespoon butter, melted

Steps:

  • Place cauliflower in a large saucepan; cover with 1 in. water. Bring to a boil. Reduce heat; cover and simmer for 5-10 minutes or until tender. , Meanwhile, in another large saucepan, melt butter. Stir in flour until smooth; gradually add milk. 4 cups cauliflower florets, steamed to tender crisp
2 cups cubed cooked ham
1 1/2 cups mushrooms, sliced
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons flour
1 cup milk (2% is OK)
salt and pepper
1 cup aged cheddar cheese, grated
1/2 cup sour cream
1 tablespoon dry breadcrumbs
salt and pepper

Steps:

  • Mix cooked cauliflower ham and mushrooms.

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 5 to 7 minutes.

3 cups 1% low-fat milk
2 cloves garlic, finely chopped
1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
1/2 cup grated Parmesan cheese
2 teaspoons Dijon mustard
1/4 teaspoon pepper
3/4 cup diced cooked extra-lean ham
2 slices (1 oz each) whole wheat bread, torn into quarters
2 teaspoons butter, melted

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.

6 ounces pecorino cheese, grated (2 cups)

1 medium bunch broccoli, trimmed and cut into florets (5 cups)
1/2 cup toasted whole-wheat panko (Japanese breadcrumbs), for serving (optional)

Steps:

Kosher salt and freshly ground pepper
6 tablespoons heavy cream
1 cup grated Swiss cheese (about 4 ounces)
1/4 cup chopped fresh parsley
2 teaspoons dijon mustard
2 tablespoons breadcrumbs
4 medium russet potatoes (10 to 12 ounces each)
6 tablespoons unsalted butter
1/2 cup finely chopped ham steak or thick-sliced Black Forest deli ham
1 small leek, halved lengthwise and thinly sliced (white and light green parts only)
1 cup finely chopped cauliflower

Steps:

  • Position racks in the middle and upper third of the oven; preheat to 400 degrees F. Scrub the potatoes and dry well. Bake directly on the middle oven rack until easily pierced with a knife, 45 to 50 minutes. Remove from the oven; let cool 5 minutes.
  • Meanwhile, melt 2 tablespoons butter in a medium skillet over medium heat. Add the ham and leek; cook, stirring occasionally, until the leek is wilted, about 6 minutes.
