Steps:

  • Line a large sheet pan with foil paper (Dimensions: 18 x13).

Steps:

  • Preheat the oven to 375°F.

4 red potatoes, cut into large cubes
1 (16 ounce) package carrots, cut diagonally into bite-size pieces

I used to buy a lot of rotisserie chicken, but after I learned this easy chicken dish, I don't think I will ever go back. The chicken turns out to be flavorful and juicy. It can be served with the vegetables as a main dish or use it in other recipes that have chicken in them.

4 tablespoons butter, softened, divided
15 garlic cloves, halved
1 can (14-1/2 ounces) chicken broth, divided

1/4 cup lemon juice

1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
10 red potatoes (about 1-1/2 pounds), cut into large chunks
