Tips:

  • Selecting the Right Chicken: Choose a whole chicken that is plump and has a moist, pink color. Avoid any chicken that appears dry or has an off-color.
  • Preparing the Chicken: Rinse the chicken thoroughly inside and out and pat it dry with paper towels. This will help the seasonings adhere better and prevent the chicken from splattering during cooking.
  • Seasoning the Chicken: Use a combination of salt, pepper, garlic powder, and paprika to season the chicken inside and out. You can also add other herbs and spices to taste, such as thyme, rosemary, or sage.
  • Cooking the Chicken: Preheat your oven to 325°F (165°C). Place the chicken in a roasting pan and roast it for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  • Making the Apple Sherry Sauce: While the chicken is roasting, make the apple sherry sauce. Sauté some shallots and garlic in butter until softened. Add diced apples and cook until they are tender. Stir in sherry, chicken broth, and cream. Simmer the sauce until it has thickened slightly.
  • Serving the Chicken: When the chicken is cooked through, remove it from the oven and let it rest for 10 minutes before carving. Serve the chicken with the apple sherry sauce and your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.

Conclusion:

This baked chicken with apple sherry sauce is a delicious and elegant dish that is perfect for any special occasion. The chicken is moist and flavorful, and the apple sherry sauce is rich and creamy. With a little planning and effort, you can create a meal that will impress your guests and leave them wanting more.
