RICK'S POBLANO BAKED FISH FILLETS

Rick's Poblano Baked Fish Fillets image

Chef Rick Bayless uses salsa to spice up baked fish fillets.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 6

1 tablespoon olive oil, plus more for baking pan
1/2 teaspoon coarse salt, plus more for blanching
4 medium-large Yukon gold or baking potatoes (about 1 1/2 pounds), scrubbed and sliced 1/4 inch thick
4 five- to six-ounce boneless, skinless fish fillets (halibut, snapper, grouper, mahi-mahi, or sea bass)
2 cups Rick's Roasted Poblano-Tomato Salsa Rick's Roasted Poblano-Tomato Salsa
Chopped fresh cilantro, for garnish

Steps:

  • Preheat oven to 400 degrees. Lightly coat a 9-by-13-inch baking pan with oil; set aside. Bring a large saucepan of heavily salted water to a boil. Add sliced potatoes, and blanch until nearly tender. Meanwhile, place 1 tablespoon oil in a medium bowl. Drain potatoes thoroughly, and add to bowl with oil; mix to coat. Spread potatoes in the prepared baking pan.
  • Arrange fish fillets over potatoes without allowing fillets to touch each other. Spoon salsa over the fillets and potatoes. Bake until fish is just done, 10 to 15 minutes. Sprinkle with cilantro, and serve immediately.

Tips:

  • Choose the right fish: For this recipe, firm-fleshed fish such as tilapia, cod, or halibut are good choices. They hold up well to baking and won't fall apart.
  • Use fresh, quality ingredients: The fresher the fish and the other ingredients, the better your dish will taste. Look for fish that is firm and has a mild odor.
  • Don't overcook the fish: Fish is delicate and cooks quickly, so it's important not to overcook it. Otherwise, it will become tough and dry. Bake the fish just until it is opaque and flakes easily with a fork.
  • Make sure the sauce is flavorful: The sauce is what really makes this dish special. Be sure to use flavorful ingredients and season it to taste.
  • Serve the fish immediately: Baked fish fillets are best served immediately after they are cooked. This is when they are at their most tender and flavorful.

Conclusion:

Baked fish fillets with piquant sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The fish is flaky and tender, and the sauce is flavorful and tangy. Serve it with roasted vegetables or rice for a complete meal.
