1 ¼ teaspoons salt, divided
2 tablespoons diced red onion
1 cup Greek yogurt
⅓ cup chopped Kalamata olives
1 ½ tablespoons chopped fresh dill
2 teaspoons red wine vinegar
2 teaspoons lemon juice
1 teaspoon garlic, minced
1 teaspoon lemon zest
½ teaspoon dried oregano
¼ teaspoon ground black pepper
3 cups diced cooked chicken
¾ cup crumbled feta cheese
½ cup diced seeded plum tomatoes
1 head Bibb lettuce, or more as needed

2 teaspoons all purpose Greek seasoning, Greek Seasoning Mix
1 lemon, juice of
1/4 cup butter, melted
16 ounces lettuce
1 tomatoes
1 cucumber, peeled diced
1 onion
2 ounces feta cheese
1/4 cup black olives
16 ounces fresh spinach
1 lemon
2 tablespoons olive oil

Steps:

  • Place chicken breasts in a baking dish.

1 tablespoon fresh oregano, chopped
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
2 cloves garlic, minced
2 cups cherry tomatoes
2 red bell peppers, cut into chunks
Two 7-ounce blocks feta, cubed
3 lemons, halved
2 English cucumbers, seeded
1 cup Kalamata olives
1 small red onion, sliced thinly
1 bunch fresh dill

Steps:

  • Preheat the oven to 475 degrees F.
  • Mix together the olive oil, oregano, salt, pepper and garlic in a small mason jar. Set aside.
