ROASTED ONIONS WITH GRUYèRE CROUTONS



Roasted Onions with Gruyère Croutons image

12 white pearl onions, peeled
12 red pearl onions, peeled
8 large shallots, peeled, halved through root end
6 large green onions, dark green tops trimmed
2 medium sweet onions (such as Vidalia), peeled, cut into 3/4-to 1-inch wedges through root end
1 large red onion, peeled, cut into 3/4-to 1-inch wedges through root end
1 brown-skinned onion, peeled, cut into 3/4-to 1-inch wedges through root end
3 tablespoons extra-virgin olive oil
1 tablespoon fresh thyme leaves
1 teaspoon coarse kosher salt
1/2 teaspoon freshly ground black pepper
3 cups coarsely torn 1/2-inch pieces rustic bread with crust
1 cup low-salt chicken broth
6 ounces Gruyère cheese, coarsely grated (about 1 1/2 cups packed)
Sea salt flakes or crystals

Steps:

  • Preheat oven to 450°F. Combine all onions and shallots in large bowl. Drizzle evenly with olive oil, then sprinkle with thyme, coarse salt, and pepper; toss gently to coat. Spread out in single layer on large rimmed baking sheet.
  • Roast onions until tender and beginning to brown in spots, 25 to 30 minutes. Scatter bread pieces on another rimmed baking sheet. Bake bread until golden brown, 7 to 8 minutes. Cool bread on baking sheet. Arrange onions in single layer in large casserole dish. DO AHEAD: Onions and croutons can be made up to 1 day ahead. Cover onions and refrigerate.
  • Store croutons in airtight container at room temperature. Bring onions to room temperature before continuing.
  • Preheat oven to 400°F. Spoon broth over onions to moisten. Scatter croutons over; sprinkle with cheese. Bake until heated through and cheese is melted, about 20 minutes. Sprinkle with sea salt flakes and serve.

6 large yellow onions (about 4 pounds)
4 slices bacon (about 3 ounces), diced
1 sprig fresh thyme
1 sprig fresh rosemary
1 sprig fresh sage
1/8 teaspoon kosher salt, plus to taste
Pinch sugar
Freshly ground black pepper, to taste
1/4 cup white wine
1/4 cup heavy cream
3/4 cup grated Gruyere cheese (about 3 ounces)
2 teaspoons Dijon mustard
1 tablespoon unsalted butter, plus for buttering the dish
1/3 cup fresh breadcrumbs

Steps:

  • Peel the onions, but leave the root end intact. Pour about 2 inches of water into a large saucepan and set up a collapsible steamer inside. Steam the onions until easily pieced by a knife, about 30 minutes. (For more tender onions you may steam them a little longer; however, they might be somewhat harder to hollow out. Either way they're delicious!) Set aside to cool.
  • Slice off about a third of the top portion of each onion. Using a paring knife, cut out the insides of each onion, leaving about 4 outside layers intact, to make a container for stuffing. Chop the onion insides and tops.
  • Preheat the oven to 400 degrees F.
  • Heat a large skillet over medium-high heat. Add the bacon and cook, stirring, until crispy and the fat has rendered, about 3 minutes. Add the chopped onion, herb sprigs, 1/8 teaspoon salt, and sugar. Season with pepper and cook, stirring occasionally, until lightly browned, about 12 minutes. Add the wine and cook until dry, scrapping the bottom of the skillet with a wooden spoon to get up any browned bits, about 2 minutes. Stir in the cream and remove from the heat. Remove and discard the herb sprigs. Stir in the cheese and mustard.
  • Lightly butter a baking dish. Season the inside of the onions with salt and pepper, and spoon the stuffing into each onion cavity, mounding it slightly on top. Set the onions in the dish.
  • Heat the butter in the skillet. Add the breadcrumbs and stir until they absorb the butter. Spoon the buttered breadcrumbs on top of each onion.
  • Roast the onions until well browned and heated through, about 40 minutes. Serve warm or at room temperature.

5 medium sweet white onions, such Vidalia
2 teaspoons extra virgin olive oil
salt
fresh ground black pepper
1 cup low sodium beef broth
2 teaspoons low sodium soy sauce
1 cup finely shredded gruyere, about 4 oz
2 teaspoons finely chopped fresh sage

Steps:

  • Preheat oven to 400 deg F.
  • Coat a large, shallow baking dish with cooking spray or oil. The dish should be large enough to hold the onion halves.
  • Trim about 1/4 inch off top and bottom of the onions, so that the halves will sit flat. Cut the onions in half crosswise and then peel them. Arrange the halves, middle cut side up, in the baking dish.
  • Brush the exposed onion tops with olive oil and sprinkle with salt and pepper. Bake about 35 minutes.
  • In a glass measuring cup, combine the broth and soy sauce.
  • Remove the onions from the oven, pour the broth mixture over the onions.
  • Return the baking dish to the oven, and bake an hour longer, basting from time to time. If the sauce gets very low, add some water.
  • Remove the dish from the oven and sprinkle evenly with the cheese and chopped sage. Bake 5 to 7 minutes longer, or until the cheese melts.

Baked French Onion Soup With Gruyère Pastry image

For a twist on a traditional French speciality, try this delicious onion soup with a gruyere pastry crust.

4 1/2 ounces butter
1 tablespoon olive oil
6 large white onions, finely sliced into rings
6 garlic cloves, crushed
1/2 teaspoon salt
1/2 teaspoon soft brown sugar
1 tablespoon flour
1 quart beef stock
1 sprig thyme
1 bay leaf
7 tablespoons cognac
7 tablespoons madeira wine
7 tablespoons dry white wine
1 pinch salt & freshly ground black pepper
7 ounces puff pastry
9 ounces gruyere, coarsely grated
1 egg yolk, mixed with a little water, for egg wash

Steps:

  • Heat the butter and oil in a large, heavy-based saucepan. When the butter has melted, stir in the onions, cover, and cook slowly until translucent, about 5 minutes.
  • Add the salt, garlic and sugar, letting the onions catch on the bottom of the pan, stirring frequently until they are golden in colour. Sprinkle the flour and cook slowly, stirring, for another 3 to 4 minutes.
  • Remove from heat, allow to cool a moment, then whisk in 1 pint of the beef stock, the thyme and the bay leaf.
  • When well blended, bring to the simmer, adding the rest of the stock, Cognac, Madeira and white wine and simmer very slowly for 1/2 an hour, adding a little water if the liquid reduces too much. Check for seasoning.
  • Preheat the oven to 400°F Roll out the puff pastry and sprinkle with half the Gruyere cheese, fold into 3 and roll out again until it is half cm thick, then cut out 4-6 lids.
  • Divide the soup among 4-6 ovenproof soup bowls. Sprinkle the remaining cheese on top of soup and cover with the pastry lids with a little egg wash seal and bake the soup in the oven for 15 minutes or until the cheesy puff pastry is golden in colour and well risen.
  • Serve immediately by breaking through the pastry which then doubles up as your crouton.

3 tablespoons butter
6 onions, thinly sliced
½ teaspoon salt
1 ½ cups white wine
3 ½ cups chicken broth
¼ teaspoon ground white pepper
¼ teaspoon ground nutmeg
2 cups shredded Gruyere cheese

Steps:

  • In a medium saucepan over medium heat, cook butter until foamy. Stir in onions and cook a couple of minutes, then reduce heat, stir in salt, cover and cook very slowly until very tender, 60 minutes.
  • Transfer onions and their caramel to a larger pot and place it over medium heat. Pour in the wine and bring to a boil. Stir in chicken broth, pepper and nutmeg and simmer gently, uncovered, 15 minutes.

ONION GRUYERE TART

2 pounds yellow onions, peeled
4 tablespoons butter
1 teaspoon vegetable oil
Pinch sugar
1/2 cup gewurztraminer
Salt to taste
Dash nutmeg
1/2 cup heavy cream
1 egg
3/4 pound Gruyere cheese
1 11-inch tart crust, chilled (see recipe)

Steps:

  • Cut onions into slices about 1/4 inch thick. Chop coarsely.
  • Heat butter and oil in heavy skillet. Add onions and cook, covered, over medium heat about 10 minutes, or until onions are limp and begin to render liquid. Add pinch of sugar.
  • Uncover onions and cook over medium-high heat 30 to 45 minutes. Stir frequently with a wooden spoon or spatula to scrape up brownings in pan. The onions should be a deep brown and reduced to a small mass. They must be watched carefully and stirred to prevent scorching and to ensure even browning.
  • Transfer onions to a bowl. Add wine to skillet and boil, scraping up pan brownings, until liquid is reduced to a thick glaze. Add glaze to onions, along with salt, nutmeg, cream and egg. Adjust seasoning. (Dish may be prepared to this point a day in advance and refrigerated.)
  • Preheat oven to 375 degrees.
  • Grate cheese and distribute half of it on bottom of chilled pastry shell in pastry tin. Distribute onion mixture evenly over cheese; top with remaining cheese.
  • Bake 40 to 45 minutes. If top browns too much, reduce heat slightly toward the end. Serve as a first course, warm or at room temperature. Tart can be made a few hours ahead, but do not refrigerate.
