BAKED PARMESAN TOMATO SLICES

Baked Parmesan Tomato Slices image

This is wonderful to make with your garden-ripe summer tomatoes! To save time prepare the mayonnaise mixture up to a day in advance. Since we love lots of spice, I use Tabasco brand spicy brown mustard but any brand brown mustard will do for this recipe, I also add in a pinch of cayenne pepper too! Recipe can easily be doubled.

Tips:

  • Choose ripe, flavorful tomatoes. Ripe tomatoes will have a deep red color and be slightly soft to the touch. Avoid tomatoes that are hard, green, or have blemishes.
  • Slice the tomatoes evenly. This will help them cook evenly. Use a sharp knife to cut the tomatoes into 1/2-inch thick slices.
  • Use a good quality Parmesan cheese. Freshly grated Parmesan cheese will give the tomatoes the best flavor. Avoid using pre-packaged or shredded Parmesan cheese.
  • Don't overcrowd the baking sheet. Leave some space between the tomato slices so that they can cook evenly.
  • Watch the tomatoes closely while they are baking. They should be cooked until they are slightly softened and the edges are starting to brown.
  • Serve the tomatoes immediately. They are best enjoyed hot out of the oven.

Conclusion:

Baked Parmesan Tomato Slices are a delicious and easy appetizer or side dish. They are perfect for any occasion, from a casual get-together to a formal dinner party. With just a few simple ingredients, you can create a dish that is both flavorful and visually appealing.
