HEALTHY BAKED PORK CHOPS WITH DRUNK PEACHES
The inspiration came from a food blog. (http://myfeastsrecipes.blogspot.com/) You can use all whiskey in place of the lemon juice here too, but we preferred a lighter whiskey taste. Serves beautifully alongside a green vegetable and rice or couscous. These peaches would be wonderful over grilled chops as well.

BAKED PEACHES
Steps:
- Preheat the oven to 375°F. Halve the peaches and remove the pits. Arrange the peaches in a shallow gratin dish, cut-side up, in a snug single layer. If you like, fill the cavity of each peach with berries. Sprinkle the sugar over the peaches and berries-more or less, depending on the fruits' sweetness. Drizzle the wine or water over the fruit. Bake the peaches for about 20 minutes, until juicy and tender. Serve warm with their juices and, if you like, with softly whipped cream or vanilla ice cream.
- Notes
- If you prefer, peel the peaches before baking: Drop the peaches in boiling water for 20 seconds or so, just enough to loosen the skins. Lift them out and plunge immediately into ice water. When cool, slip off the skins.
- In place of the berries, the peaches are delicious baked with an almond stuffing: Cream together 1/4 cup butter and 1 tablespoon sugar. Blend in 1 small egg yolk, 1/4 cup lightly toasted and chopped almonds, and 4 crushed macaroon cookies. Spoon the stuffing into the cavities of the peaches and bake. The stuffing is equally good with pears, nectarines, or apricots.

SWEET BAKED RICOTTA WITH GLAZED PEACHES
From "A Taste of Australia: The Bather's Pavilion Cookbook" by Victoria Alexander and Genevieve Harris, this ricotta is easier to turn out and slice when it is cold, so you can bake it the day before you wish to serve it, slice it when it is cold and then let it come to room temperature. It is best made in a nonstick loaf tin, 25 cm (10 in) long, 5 cm (2 in) wide and 7.5 cm (3 in) deep. The baked ricotta is also delicious served with fresh fruits. Prep time does not include time to cool ricotta.

Steps:
- To bake the ricotta:
- Preheat the oven to 150°C (300°F).
- In a large bowl, whisk together the ricotta and the eggs.
- Split the vanilla bean and scrape in the seeds.
- Sift in the icing sugar and mix thoroughly. Spoon the ricotta mixture into the loaf tin and cover with aluminum foil.
- Place the tin into a slightly larger baking pan and pour in enough water to come about half-way up the side of the loaf tin. Carefully place the baking pan in the oven. Bake the ricotta for 40 minutes, or until firm.
- When the ricotta is ready, remove the loaf tin from the water bath and remove the foil. Let the ricotta cool, then cover it with plastic wrap (cling film) and refrigerate. When it is thoroughly cold you can turn it out of the tin and slice it as required.
- It will have more flavour if you allow it to warm to room temperature before serving it.
- To glaze the peaches:
- Preheat the griller (broiler) to hot.
- Halve the peaches and remove the skins if desired (if using frozen peaches, defrost). Sprinkle with the extra icing sugar and place under the griller (broiler) until the sugar is caramelised, about 2-5 minutes.
- To serve, arrange ricotta slices and two peach halves on each plate.

Tips:
- Choose ripe peaches: The riper the peaches, the sweeter and more flavorful they will be. Look for peaches that are slightly soft to the touch and have a deep, rich color.
- Use a variety of peaches: If you can, use a variety of peaches, such as white peaches, yellow peaches, and donut peaches. This will give your dish a more complex flavor and texture.
- Pit the peaches carefully: When pitting the peaches, be careful not to damage the flesh. You can use a paring knife or a melon baller to remove the pits.
- Don't overcook the peaches: Peaches are a delicate fruit, so it's important not to overcook them. Bake them just until they are soft and juicy, but still hold their shape.
- Serve the peaches warm or cold: Baked peaches can be served warm or cold. If you are serving them warm, top them with a scoop of vanilla ice cream or whipped cream. If you are serving them cold, chill them for at least 30 minutes before serving.
Conclusion:
Baked peaches are a delicious and easy-to-make dessert that can be enjoyed by people of all ages.
