1 (14 ounce) can diced tomatoes, undrained
1/3 cup tomato paste
1/4 cup dry red wine or 1/4 cup tomato juice

1 lb lean ground beef

4 cups cooked penne (about 3 cups uncooked)
2 1/2 cups grated mozzarella cheese, divided

1/4 cup extra virgin olive oil
1 onion, finely chopped
1 lb Italian sausage
1 lb ground round
1 (28 ounce) can diced tomatoes, draineed
1 tablespoon tomato paste
2 teaspoons chopped marjoram leaves
2 tablespoons chopped flat leaf parsley
salt
fresh ground black pepper
1/2 cup unsalted butter
3/4 cup all-purpose flour
1 quart whole milk
2 large egg yolks
1 cup freshly grated parmigiano-reggiano cheese

Steps:

  • Preheat oven to 350 degrees. Cook pasta to al dente stage in a large pot of boiling water. Drain well.
  • In a large, deep skillet, heat olive oil. Add onion and cook over moderate heat, stirring occasionallly, until softened, about 4 minutes. Add Italian sausage and ground round, stirring to break up, until meat is browned, about 10 minutes. Remove from heat and stir in diced tomatoes, tomato paste, marjoram, and parsley. Season with salt and pepper. Transfer to a large bowl.
  • In a large saucepan, melt the butter. Add flour and cook over moderate heat, whisking, for 2 minutes. Gradually whisk in the milk and cook over moderately high heat, whisking constantly, until the sauce is very thick and boiling, 7-8 minutes. 1 red pepper, halved and cleaned
1 yellow pepper, halved and cleaned
1 orange bell pepper, halved and cleaned
2 large sweet onions, halved
1 lb white mushroom, cleaned
1 cup fresh basil, leaves only
3 fresh garlic cloves, minced
4 plum tomatoes, halved
2 lbs ground beef
1 lb sweet Italian sausage, bulk
2 (28 ounce) cans Italian plum tomatoes, with tomato puree and basil
1 teaspoon italian seasoning (I like Penzey's)
1 lb ricotta cheese
2 large eggs
2 lbs penne, cooked half done
1 lb mozzarella cheese, shredded
1/2 cup parmesan cheese, grated
salt and pepper

Steps:

  • Heat gas grill to medium high. Place mushrooms and tomatoes skin side down on grill pan (which has been sprayed with oil) onto grill. Place peppers skin side down directly on grill. Grill veggies for approximately 5-7 minutes or until grill marks form. Do not over cook- veggies should not be soggy.
  • Remove veggies from grill and set aside to slightly cool. Rough chop all the veggies. Place veggies into large bowl and add basil leaves (tear into pieces.) Add minced garlic and combine and set aside.
  • Brown beef and sausage in large skillet. Add canned tomatoes, breaking up with wooden spoon. Add Italian seasoning and salt and pepper to taste. Simmer meat sauce for approx 15-20 minutes. Remove from heat and allow to cool.
  • In a food processor combine ricotta and eggs until smooth. Set aside.
  • In a large roasting pan or extra large baking dish, layer ingredients as follows: 1/2 meat sauce, 1/3 pasta, ricotta, 1/2 mozarella, 1/3 pasta, veggies, 1/3 pasta, 1/2 meat sauce, 1/2 mozzarella, parmigiana. Cover with foil which has been sprayed with oil on inside.
  • Bake at 350 degrees F for two hours or until bubbly and hot all through.
