Coarse salt and ground pepper
1 tablespoon unsalted butter
2 teaspoons all-purpose flour
1 cup dry white wine
1 tablespoon chopped fresh chives

Steps:

  • Preheat oven to 450 degrees. Place salmon on a rimmed baking sheet; season with salt. Roast until opaque throughout, about 15 minutes.
  • Meanwhile, in a small saucepan, melt butter over medium. Add flour, and cook, whisking, 1 minute. 1 Cup White Wine Dry white is best
2 tsp Flour
1 Tbsp Chives
Salt and Pepper To taste
1 Cup Heavy Cream

Steps:

  • Directions 1. Preheat oven to 450 degrees. Place salmon on a rimmed baking sheet; season with salt. Roast until opaque throughout, about 15 minutes. 2. ¼ cup butter, melted
¼ cup white wine
1 lemon, juiced
5 cloves garlic, chopped
1 bunch fresh dill, stems trimmed
1 (1 pound) salmon fillet
½ cup toasted almonds

4 x 150g (5-6oz) salmon fillets (skin on)
2 tbsp butter
3-4 garlic cloves (crushed)
1 cup dry white wine
1-2 tbsp lemon juice
2 tbsp chopped parsley

  • Heat a large frying pan over high heat and add a splash of canola oil.
  • Dry the salmon fillets with paper towel and season generously with salt.

2 cups of the liquid in which the salmon was baked (see recipe)
Vegetables and seasonings with which the salmon was baked
1 cup heavy cream
2 tablespoons butter at room temperature
2 tablespoons flour
4 tablespoons cold butter
Juice of half a lemon
Salt
Cayenne pepper

  • Pour the liquid from the foil in which the salmon baked into a saucepan. Add the chopped or sliced vegetables with which the salmon was baked. Bring this mixture to the boil and let it simmer about 15 minutes or until it is reduced to one and one-half cups when strained.
  • Strain the sauce and return it to the saucepan. Add the cream.
  • Prepare a beurre manie by blending the room-temperature butter and flour until they form a smooth paste. This salmon recipe really infuses the fish with a delicious lemony wine flavor. Its super moist and wonderfully complex tasting when done. Not to mention fairly easy. Depending on your tastes you can go with a Moscato for a sweeter taste or Pinot Grigio for more lemony flavor. I tend towards the Pinot Grigio myself. The small 187ml bottles are just about perfect for a 1 lb. fillet but if you just want to go ahead and buy the whole bottle then serve the rest with dinner that's good too. Sometimes I will marinate the salmon in the same mix of wine lemon and herbs for an hour before cooking but it's not really that necessary.

1 bunch shallot, coarse chopped
