2 tablespoons chopped walnuts
1/4 teaspoon grated orange zest
1/4 cup packed brown sugar
1/4 cup water
1 tablespoon butter

Steps:

  • Combine raisins, nuts and orange zest; set aside. In a saucepan, bring brown sugar, water, butter, cinnamon and nutmeg to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally. 3 cups port
12 ounces fresh cranberries, washed
1/2 medium red onion, diced
1-ounce fresh ginger, peeled and cut into julienne
3 tablespoons dark brown sugar
1 teaspoon salt
1 teaspoon white pepper
1/2 teaspoon ground cinnamon
3 tablespoons orange liqueur

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small saucepan, heat the orange and lemon juices with 1/2 cup of the port. Add the zest and cook until tender, about 10 minutes. Reserve.
  • In a medium saucepan, combine the cranberries, onion, 2 cups port, ginger, brown sugar, salt, pepper, and cinnamon. Over medium-high heat, cook until the relish thickens, 15 to 20 minutes, stirring occasionally. Stir in the remaining 1/2 cup port, the orange liqueur, and the reserved orange and lemon juice and zest mixture. Set aside.
  • Cut off the top 1/4-inch of each apple. Using a melon baller, remove the core of the apple, being careful not to pierce the sides or bottom of the apples, to make apple "cups". Place the apple cups in a small baking dish. Spoon the cranberry relish into the apples. Spoon the excess relish around the apples. 2 oranges
6 large apples (preferably Rome beauty)
Juice 1 lemon
4 tablespoons butter
1/2 cup sugar
1/4 cup Calvados or cognac
3/4 cup dry white wine
1/2 cup red currant jelly
1/4 pint heavy cream

Steps:

  • Preheat oven to 325 degrees. Carefully pare the peel from the oranges and cut into julienne strips. Simmer the strips for 10 minutes in water. Drain and rinse. Squeeze the juice from the oranges, strain and set aside.
  • Peel and core the apples and put them in a bowl with water to cover and add the juice of the lemon to prevent them from discoloring.
  • Drain the apples. Using 2 tablespoons butter, grease a flameproof baking dish just large enough to hold them comfortably. Put a teaspoon butter in each apple. Sprinkle with sugar. Add 2 tablespoons of the cognac, white wine and orange juice. Bring to simmer on top of the stove, cover loosely with foil paper and put into the oven.
  • Bake for 25 minutes, checking occasionally to make sure that the liquid remains at a simmer and that the apples are not overcooking. If they cook too long, they will collapse.
  • When the apples are done, arrange them on a serving dish. Add the jelly to their cooking juices and bring to boil. Stir in remaining cognac and orange peel. Cook for a minute or two, or until the sauce is thick enough to coat the spoon. Pour over the apples. Serve at room temperature, with the cream in a small jug.

4 tart baking apples, like Winesap or Empire
1/3 cup plus 4 teaspoons maple syrup
4 teaspoons brown sugar
4 teaspoons chopped pecans
4 teaspoons chopped golden raisins
1/4 cup dry white wine or water
3 cardamom pods
2 whole cloves
1 1/4-inch-thick slice fresh ginger root
1 2-inch piece cinnamon stick

Steps:

  • Heat oven to 375 degrees. Butter a small cake or baking pan. Use a vegetable peeler to peel a strip of skin from around stem of each apple. Use a melon baller or grapefruit spoon to scoop out core of each apple, leaving at least 1/4 inch at base. Stand apples in pan and use a paring knife to make 6 vertical cuts surrounding cavity, being sure not to pierce through bottom of apple.
  • Place 1 teaspoon butter and 1 teaspoon maple syrup into cavity of each apple. Mix together brown sugar, pecans and raisins, and stuff 1/4 of this mixture into each apple. Pour remaining maple syrup and the wine into bottom of pan, and add cardamom, cloves, ginger and cinnamon.

3/4 cup(s) butter crackers, crushed
