Riz au Cari (Curried Rice) image

Number Of Ingredients 9

1 tablespoon butter
1/3 cup finely chopped onion
1 teaspoon finely minced garlic
1 tablespoon curry powder
1 bay leaf
Salt to taste if desired
Freshly ground pepper to taste
1 cup rice
1 1/2 cups fresh or canned chicken broth

Steps:

  • Heat the butter in a saucepan and add the onion and garlic. Cook, stirring, until wilted. Add the curry powder, bay leaf, salt, pepper and rice, stirring to coat the grains.
  • Add the broth and cover. Bring to a boil, lower the heat and simmer for exactly 17 minutes. Remove the bay leaf and serve.
