SPICY OVEN BAKED VEGETABLE FRIES --
A healthier version of French Fries, the combination of sweet potatoes and turnips is a taste treat - even if you don't normally care for turnips. The combination makes a great sidedish to serve with pork tenderloin, if the vegetables are cut into chunks and baked. I've never tried adding garlic powder, but. . .

Steps:
- Make the dip
- In a small bowl, blend together the yogurt, garlic, dill, lemon zest, lemon juice, salt, and pepper. Cover and refrigerate for at least an hour to allow the flavors to meld.
- Make the zucchini fries
- Heat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone mat.
- Prepare your ingredients: Place flour in a large Ziploc bag. Crack eggs into a shallow dish and whisk along with 2 tablespoons water. Mix Panko breadcrumbs, salt, pepper, garlic powder, and cayenne pepper in a shallow dish.
- Add zucchini to the Ziploc bag with flour and shake gently until all pieces are covered.
- Working with three or four sticks at a time, dip the zucchini sticks in the egg mixture then place in the Panko mixture, turning to coat. Gently lay on the baking sheet. Repeat, mixing the Panko breadcrumbs often to keep spices distributed, until all pieces are coated.

- Serve immediately with dip.
SPICY BAKED SWEET POTATO FRIES WITH COOL GREEK YOGURT RANCH

Steps:
- Preheat oven to 400 degrees Fahrenheit.
- Scrub sweet potatoes or peel off the skin, if you desire (I like to leave it on). Cut sweet potatoes into approx. 1/4-inch matchsticks. Put sweet potatoes into a large bowl and sprinkle the cornstarch over the top. Toss with your clean hands until all of the fries are coated. Drizzle with olive oil and toss again. Add maple syrup or brown sugar, chili powder, cinnamon, cayenne pepper, and salt. Toss until all of the fries are coated.
- Lay fries on a baking sheet, making sure there is a little space around each fry - don't crowd or pile them! Depending on the size of your baking sheet, you may need to use two (I do).
- Place in oven and bake until golden brown and many are crisp, about 25 minutes, turning carefully at right around the 15 minute mark. Remove fries from oven and let cool a bit.
- While the fries are baking, make your ranch dip. In a small bowl, stir together all of the dip ingredients. Taste and add more salt and pepper if desired.
- Add more salt to the fries if you like. Serve warm with the ranch dip.
Tips:
- Use a variety of potatoes: For the best results, use a combination of starchy and waxy potatoes. Starchy potatoes, such as Russet potatoes, will help to create a crispy exterior, while waxy potatoes, such as Yukon Gold potatoes, will help to keep the fries moist on the inside.
- Cut the fries evenly: Cutting the fries evenly will help them to cook evenly. Use a sharp knife to cut the potatoes into 1/2-inch thick slices, then cut the slices into 1/2-inch wide fries.
- Soak the fries in water: Soaking the fries in water will help to remove excess starch, which will help to prevent them from sticking together. Soak the fries in cold water for at least 30 minutes, or up to overnight.
- Dry the fries thoroughly: Before frying the fries, make sure to dry them thoroughly with a paper towel. This will help to prevent them from splattering in the oil.
- Use a high-quality oil: For the best results, use a high-quality oil with a high smoke point, such as canola oil, peanut oil, or grapeseed oil.
- Fry the fries in batches: Do not overcrowd the pan when frying the fries. This will cause them to steam instead of fry, and they will not be crispy.
- Season the fries immediately: Immediately after frying, season the fries with salt and pepper, or your favorite seasoning blend. This will help the seasoning to stick to the fries.
Conclusion:
Baked spicy fries are a delicious and easy-to-make snack or side dish. By following these tips, you can make the best baked spicy fries at home. These fries are crispy on the outside, fluffy on the inside, and packed with flavor. They are perfect for dipping in your favorite sauce or enjoying on their own. So next time you are looking for a tasty snack, give baked spicy fries a try!
