6 sweet potatoes, cut into French fries
2 tablespoons canola oil
3 tablespoons taco seasoning mix
¼ teaspoon cayenne pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • In a plastic bag, combine the sweet potatoes, canola oil, taco seasoning, and cayenne pepper. Close and shake the bag until the fries are evenly coated. Spread the fries out in a single layer on two large baking sheets.
  • Bake for 30 minutes, or until crispy and brown on one side. Turn the fries over using a spatula, and cook for another 30 minutes, or until they are all crispy on the outside and tender inside. Thinner fries may not take as long.

2 medium sweet potatoes, washed and cut lengthwise into strips 1/3 inch on each side
1 1/2 tablespoons olive oil
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon salt
1/2 teaspoon onion powder

Steps:

  • Preheat oven to 450°F With aluminum foil or parchment paper, line a cookie sheet.
  • In a medium bowl, combine sweet potatoes with olive oil and seasonings. Mix well to evenly coat potatoes. Place potato strips on the foil or parchment lined cookie sheet and leave space between strips for even baking.

2 -3 russet potatoes (depending on amount of people.)
1 teaspoon olives or 1 teaspoon canola oil
1 teaspoon chili powder

1 piece of parchmount paper

Steps:

  • Select 2-3 russet potatoes.
  • Leave skins on as well but wash to remove any sand etc.

  • Dry on a tea towell.Put into a bowl,sprinkle the oil onto potatoes.
  • Add the dry ingrediants and combine all together with potatoes.

  • Bake in oven at 450 degrees about 30 minutes(depends on amount of potatoes being done).

1 pound zucchini (cut into 4" - 5" sticks)
1/4 cup all-purpose flour
2 eggs
2 cups Panko breadcrumbs
1/2 teaspoon Kosher salt
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper (or less or more depending on your heat preference)
2 tablespoons olive oil
1 cup Greek yogurt
1 small clove garlic (minced)
1 tablespoon fresh chopped dill
1 teaspoon lemon zest
1 teaspoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Make the dip
  • In a small bowl, blend together the yogurt, garlic, dill, lemon zest, lemon juice, salt, and pepper. Cover and refrigerate for at least an hour to allow the flavors to meld.
  • Make the zucchini fries
  • Heat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone mat.

2 medium sweet potatoes
2 tablespoons corn starch
2 tablespoons olive oil
1 tablespoons pure maple syrup or brown sugar
1/2 teaspoon chili powder
1/2 teaspoon cinnamon
1/8 teaspoon cayenne pepper (add more for more heat)
1/4 teaspoon kosher salt or fine-grain sea salt + more to taste
3/4 cup Greek yogurt (I use full-fat)
2 teaspoons white wine vinegar or champagne vinegar
1-2 garlic cloves (smashed and finely minced (about 2 heaping teaspoons))
2 tablespoons finely chopped onion
1 tablespoon fresh minced dill
1/2 teaspoon kosher salt (plus more to taste)
1/4 teaspoon freshly ground black pepper (plus more to taste)

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Scrub sweet potatoes or peel off the skin, if you desire (I like to leave it on). Cut sweet potatoes into approx. 1/4-inch matchsticks. Put sweet potatoes into a large bowl and sprinkle the cornstarch over the top. Toss with your clean hands until all of the fries are coated. Drizzle with olive oil and toss again. Add maple syrup or brown sugar, chili powder, cinnamon, cayenne pepper, and salt. Toss until all of the fries are coated.
  • Lay fries on a baking sheet, making sure there is a little space around each fry - don't crowd or pile them! Depending on the size of your baking sheet, you may need to use two (I do).
  • Place in oven and bake until golden brown and many are crisp, about 25 minutes, turning carefully at right around the 15 minute mark. Remove fries from oven and let cool a bit.
  • While the fries are baking, make your ranch dip. In a small bowl, stir together all of the dip ingredients. Taste and add more salt and pepper if desired.
  • Add more salt to the fries if you like. Serve warm with the ranch dip.
