1 quart milk
½ cup butter
1 cup uncooked grits
1 teaspoon salt
½ teaspoon white pepper
1 cup shredded Cheddar cheese
⅓ cup butter
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Bring the milk to a boil in a pot over medium heat. Melt 1/2 cup butter in the boiling milk. Gradually mix in the grits, and cook 5 minutes, stirring constantly. Remove from heat, and season with salt and pepper. Beat with a whisk or electric mixer until smooth. Mix in the Cheddar cheese and 1/3 cup butter. Transfer to the prepared baking dish, and sprinkle with Parmesan cheese.
  • Bake 1 hour in the preheated oven, until firm.

1 cup quick-cooking grits
1 can (10 ounces) diced tomatoes and green chiles, drained
1 cup shredded Monterey Jack cheese

1 medium green pepper, chopped
1 medium onion, chopped
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
2 garlic cloves, minced

  • Preheat oven to 350°. In a 13x9-in. or 2-1/2-qt. baking dish, combine broth and grits. 2 cups water
1 1/4 cups milk
1 teaspoon salt
1 cup quick-cooking grits
1/2 cup butter, plus
1 tablespoon butter
1/3 cup diced green onion
4 teaspoons processed cheese, cubed (suggested ( Velveeta)
1/4 teaspoon garlic powder
2 1/2 cups shredded cheddar cheese, divided
1 (14 ounce) can Rotel Tomatoes

Steps:

  • Preheat oven to 350 degrees F.
  • In a saucepan, bring the water and milk to a boil. Add the salt and slowly add the grits and return to a boil, stirring constantly for 1 minute. Reduce the heat, cover, and cook for 3 minutes. While stirring the grits add the 1/2 cup of butter and stir until butter is melted. Cover and cook for 3 to 5 minutes, or until the grits are thick and creamy. Remove from heat and set aside.
  • Using a skillet, sauté the onions in the remaining tablespoon of butter for 1 minute.
