4 medium beets, tops trimmed and scrubbed
1/4 cup balsamic vinegar
salt
fresh ground pepper

Steps:

  • Heat oven to 400°F
  • Place each beet on a square of aluminum foil and wrap tightly.
  • Place on baking sheet.
  • Bake until the beets are tender when pierced with a wooden toothpick, usually 1 to 1 1/2 hours.

1/4 cup chopped hazelnuts (toasted,and skin removed)
6 medium beets, trimmed
1 red onion, sliced very very thinly (paper thin)
3 tablespoons balsamic vinegar
2 tablespoons olive oil
1/2 teaspoon honey
1/8 teaspoon salt
finely ground pepper
1 tablespoon minced fresh parsley

Steps:

  • Wrap the beets in a large piece of aluminum foil and place on a baking sheet.

1/2 cup good olive oil
2 teaspoons Dijon mustard, such as Grey Poupon
Kosher salt and freshly ground black pepper
4 ounces baby arugula
1/3 cup roasted, salted Marcona almonds, toasted
4 ounces soft goat cheese, such as Montrachet, crumbled

Steps:

  • Preheat the oven to 400 degrees.
  • Wrap the beets individually in aluminum foil and place them on a sheet pan. Roast them for 50 minutes to 1 hour, depending on their size, until a small sharp knife inserted in the middle indicates that they are tender. 8 medium beets (about 2 pounds total)
1/2 cup water
1/4 cup canola or other vegetable oil
6 tablespoons balsamic vinegar
2 to 4 tablespoons extra-virgin olive oil, to taste
1 teaspoon coarse (kosher) salt
Freshly ground black pepper, to taste

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Trim the beets, leaving on the skin, an inch of the stem, and the wispy "tail" on the bottom of each, then scrub and drain. Place the beets in a small casserole dish just big enough to hold them. 3 small red onions, each cut into 8 wedges
1 tablespoon olive oil
