1 tablespoon olive oil
4 (6 ounce) skinless, boneless chicken breast halves
¼ cup fat-free reduced-sodium chicken broth
2 teaspoons minced fresh thyme
⅓ cup seedless blackberry fruit spread, no sugar added
1 tablespoon balsamic vinegar
½ teaspoon cornstarch, or as desired

Steps:

  • Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts until golden brown on both sides, 2 to 3 minutes per side. While the chicken breasts are cooking, whisk together the chicken broth, thyme, blackberry spread, and balsamic vinegar.
  • Once the chicken breasts have browned on both sides, pour in the blackberry sauce, and bring to a simmer. 1 teaspoon oil
½ cup chopped onion
½ teaspoon dried thyme
½ teaspoon salt
4 (4 ounce) skinless, boneless chicken breast halves
⅓ cup seedless blackberry jam
2 tablespoons balsamic vinegar
¼ teaspoon ground black pepper

Steps:

  • Heat oil in a skillet over medium-high heat. Saute onion until soft and translucent, about 5 minutes.
  • Meanwhile, sprinkle 1/4 teaspoon salt and thyme over chicken. Add chicken to the skillet. Saute chicken until no longer pink in the middle, 6 to 7 minutes per side. Transfer chicken to a serving plate and reduce heat to medium.

cooking spray
1/2 cup chopped red onion
salt and pepper
1/2 teaspoon dried thyme
6 boneless skinless chicken breast halves
1/3 cup seedless blackberry preserves
2 tablespoons balsamic vinegar
