1 tablespoon Dijon mustard
1 tablespoon honey
1 shallot, minced
2 tablespoons balsamic vinegar
1/4 cup olive oil
1 tablespoon freshly squeezed lemon juice
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
4 carrots, peeled and sliced
2 Belgian endives, separated
1 red pepper, membranes and seeds removed, sliced into 1/4-inch strips
1 fennel bulb, trimmed, cored and sliced into bite-size pieces
1 bunch radishes, trimmed
1 cup teardrop tomatoes, stemmed

Your assignment: find the best Italian bread, olive oil and balsamic available. Whatever you do, NO dried Italian herbs; no "lite" olive oil are allowed. The only thing I could possibly think of that would make this sublime is to float a few fresh basil leaf ribbons on top....but that all depends on what you plan to serve with this appetizer. A bottle of good Italian wine would bring it all together nicely, rhetorically speaking.

1 loaf fresh Italian bread, sliced
1/2 cup extra virgin olive oil
2 -3 teaspoons dark aged balsamic vinegar
fresh basil leaf, chiffonade (optional)

Steps:

  • NOTE: Play around a little bit with the olive oil/balsamic vinegar proportions. There should however always be more olive oil than vinegar.

1 tablespoon evoo -- extra-virgin olive oil, 1 turn of the pan
1/2 onion, chopped
1 1/4 pounds bulk Italian sweet sausage meat
3 tablespoons chopped fresh sage, 4 or 5 sprigs, slivered
1/4 cup balsamic vinegar, eyeball it
1 cup apricot all-fruit spread or, apricot preserves
1/2 cup spicy brown mustard
1 cup Italian bread crumbs, a couple of handfuls
Italian beer (Moretti, Peroni)
wines (chianti classico, primitivo, nero d'avola)
San Pelligrino water and sliced citrus fruit

Steps:

  • Preheat a small pot over medium heat and the oven to 425 degrees F.
  • To the pot, add oil and onion. Saute the onion for 1 minute.
  • In a mixing bowl, combine sweet sausage and chopped sage.
  • Next, add balsamic vinegar to onion and reduce by half, 1 minute. Remove vinegar from heat and combine with apricot all-fruit spread or preserves and spicy mustard. Stir until mustard is fully incorporated. Dip will be glossy and brown in color.
  • Add 2 tablespoonfuls of apricot dip to bulk sausage and mix. Form meat into bite size nuggets, coat in bread crumbs then place on nonstick cookie sheet. Recipe will make 20 to 24 pieces.
