This is another easy side dish to have with your Chinese night dinners. Note: if using fresh Bamboo Shoots boil in water for 30 minutes. Also soak mushrooms in wram water for 20 minutes

1/2 cup fresh or canned bamboo shoot (rinsed and finely sliced)
1 lb firm tofu, cut into 1 inch squares
3 dried Chinese mushrooms, soaked in warm water for 20 minutes
2 ounces baby bok choy
1 teaspoon oyster sauce
1 teaspoon light soy sauce
1 pinch black pepper
vegetable oil (for deep frying) or peanut oil (for deep frying)

Steps:

  • squeeze out water from mushrooms and finely slice them.
  • blanch bok choy in pot of boiling water for 30 seconds, drain and set aside.
  • heat enough oil in wok to deep fry the bean curd cubes, fry until golden brown, remove, drain on paper towel and set aside.
  • remove oil from wok, and add 1 tablespoon of oil, heat until hot.
  • add mushrooms, bok choy, stir.
  • add bean curd, bamboo shoots, oyster sauce, and soy sauce.
  • heat through.
  • add pinch of black pepper, and serve.

DEEP-FRIED BEAN CURD WITH PORK AND VEGETABLES



Deep-Fried Bean Curd With Pork and Vegetables image

Number Of Ingredients 20

4 3-inch-by-3-inch-by-1-inch pieces bean curd (tofu)
2 cups oil for frying
1/2 pound lean raw pork
1 teaspoon cornstarch
1 teaspoon light soy sauce
2 teaspoons sake or dry sherry
1/4 teaspoon sugar
1/4 teaspoon peanut oil
1/2 cup bamboo shoots
1/2 cup celery
1/8 pound Smithfield ham
10 medium-size dried Chinese black mushrooms
1 clove garlic
2 teaspoons cornstarch mixed with a little water
1/8 teaspoon sugar
1 tablespoon oyster sauce
1/8 teaspoon pepper
2 tablespoons peanut oil
1/2 teaspoon salt
3/4 cup chicken stock or water

Steps:

  • Cut each cake of bean curd into 4 cubes, and deep-fry the pieces in oil, heated to 375 degrees, about 5 minutes, or until golden. (When adding bean curd to hot oil, do so gently, using the lid of the wok as a shield to protect yourself from any spattering oil.) Remove the bean curd, drain, cool, and cut into 1/8-inch julienne strips. Set aside. Cut the pork into similar strips, and mix with the next 5 ingredients. Cut the bamboo shoots, celery and ham into similar strips. Soak mushrooms 15 minutes in warm water, discard the stems and cut into similar julienne strips. Mince garlic. Mix cornstarch solution with the next 3 ingredients.
  • Using high heat, heat a wok, add the oil, salt and garlic, and stir-fry 10 seconds.
  • Add pork, and stir-fry 2 minutes.
  • Add bean curd, bamboo shoots, celery and mushrooms, and stir-fry 10 seconds.
  • Add stock, cover and boil 2 minutes.
  • Add cornstarch solution, stir until thickened, remove from heat, and serve, garnished with Smithfield ham.

2 cups bamboo shoots
1/2 cup chicken breast
1/2 cup smoked ham
1/4 cup water chestnut
2 egg whites
1 tablespoon cornstarch
Chinese parsley

Steps:

  • 1. Cut bamboo shoots lengthwise in 2-inch strips. 2. Mince chicken together with smoked ham and water chestnuts. 3. Blend egg whites with cornstarch then add to minced ingredients and mix to a smooth paste. 4. Roll bamboo strips one at a time in the paste to coat well and arrange on a heatproof dish. 5. 1/2 lb spinach, rinsed and stems removed
3/4 cup cooked chicken, chopped into 1/4 inch cubes
6 cups chicken stock
1/3 cup bamboo shoot, cut into 1/4 inch dice
4 dried black mushrooms, soaked 20 minutes in hot water,stems removed,cut into 1/4 inch cubes
12 ounces firm tofu, cut into 1/4 inch cubes (tofu)
4 tablespoons cornstarch, dissolved in
4 tablespoons cold water
1 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons cooked ham, minced
2 tablespoons chopped cilantro

Steps:

  • Blanch spinach in boiling water for 1 minute; rinse in cold water, squeeze dry and chop fine.
  • Bring stock to a boil; add chicken, bamboo shoots, mushrooms and bean curd; thicken with dissolved cornstarch.
  • Add spinach, bring to a boil; add salt and pepper, stir until well blended.
  • Sprinkle ham on top; garnish with chopped cilantro and serve.
