Number Of Ingredients 9

1 medium banana
2 tablespoons light oil, such as canola or vegetable
2 eggs
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3 tablespoons granulated sugar
1/2 teaspoon cinnamon
1 1/3 cup milk

Steps:

  • Preheat your waffle iron according to manufacturer's instructions.
  • In a medium mixing bowl, add the banana and use a fork to mash very well.
  • Add the oil and eggs, and beat to combine well.
  • Add the flour, baking powder, salt, sugar, and cinnamon to the bowl, and stir until just combined.
  • Add the milk and stir until just combined.
  • Make the waffles according to the directions that came with your waffle iron.
  • When one waffle is done, let it rest on a wire wrack, taking care not to stack the waffles (the steam they produce makes them soggy if you stack them on a plate).
  • Serve hot with your favorite toppings such a maple syrup, buttermilk syrup, sliced bananas, pecans, whipped cream, or even chocolate sauce, Nutella, or peanut butter on top.

BANANA EGG WAFFLES

Our family makes these waffles for a gluten-free breakfast that tastes great, too! These waffles taste delicious with fruit inside them, too! Try substituting blueberries for chocolate chips; they're still delicious! Spread some butter, then add a dollop of maple syrup, and the kids will never know these aren't the regular pancakes you make every Saturday morning!

BANANA WAFFLES

The most delicious waffles! Usually served as a snack or dessert. Also try them with Korean red bean paste instead of the banana, it's even better! I remember eating these while visiting Korea, and recreated the taste at home.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 10

1 3/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 egg yolks
1 1/2 cups milk
2/3 cup banana, ripened and mashed
1/2 cup cooking oil
2 egg whites

Steps:

  • In a large mixing bowl combine flour, baking powder, cinnamon, nutmeg, and salt. In a separate bowl beat together egg yolks, milk, banana, and oil. Gradually stir in the yolk mixture with the flour mixture until combined but slightly lumpy.
  • In a medium bowl whisk the egg whites until stiff peaks form. Gently fold the egg whites into the rest of the batter, leaving a few white fluffs of egg white. * Don't over mix.
  • Pour 1 to 1 1/4 cup batter into grids of a preheated, lightly greased waffle iron. Close lid quickly and do not open during baking. Bake according to manufacturer's directions.
  • When done use a fork to lift waffle from grid. Repeat with remaining batter. Keep waffles warm in oven while cooking remaining waffles. Serve with maple syrup.

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your waffles will be.
  • Don't overmix the batter. Overmixing will make the waffles tough.
  • Cook the waffles on a hot waffle iron. This will help them cook evenly and prevent them from sticking.
  • Serve the waffles immediately. Waffles are best when they're hot and fresh.
  • Top the waffles with your favorite toppings. Some popular toppings include butter, syrup, fruit, and whipped cream.

Conclusion:

Banana egg waffles are a delicious and easy-to-make breakfast option. They're perfect for a quick and satisfying meal on a busy morning. With just a few simple ingredients, you can make a batch of waffles that the whole family will love.
