Steps:
- In a mixing bowl, use a fork to smash the bananas.
- Add in pancake mix, cinnamon and milk. Whisk together until combined.
- Fry in oil. About 1 tablespoon per fritter.
- Cook for about 2-3 minutes until they are golden brown and cooked through the middle.
- Sprinkle powdered sugar.

It costs a lot of money for a decent bottle of pasta sauce - so I thought I would have a go at making my own to freeze. It tastes yummy

Steps:
- Fry the onions and garlic in olive oil until fragrant.
- Add the chopped tomatoes, zucchini and eggplant.
- There is no need to add liquid as the tomatoes form their own.
- Bring to the boil, then cover and simmer for around 40 minutes- until everything is very soft.
- Season to taste.
- Strain the tomato mixture- do not reserve the liquid, and transfer to a blender.
- Add the chopped basil to the blender and blend until the sauce is smooth.
- Return the sauce to the pot, and add the sliced mushrooms.
- Simmer until the mushrooms are cooked.

Steps:
- Heat the avocado oil in a large diameter wok or skillet over medium-high heat until the temperature reaches 350°F (180°C).
- Carefully add the bananas to the hot oil, then sprinkle the brown sugar over the bananas. Fry for 2 minutes without stirring to allow the sugar to caramelize. Carefully turn bananas with tongs or a wok spatula to coat with the caramelized sugar. Continue frying, turning frequently, until the bananas are deep golden brown in color, 3-5 minutes.
- Remove the bananas from the oil and place on parchment paper and let sit until cool enough to touch, about 5 minutes.
- Insert 1-2 skewers into the bottom of each banana cue. Serve immediately.
