I got this recipe form my mother-in-law. Bananas, crushed pineapple and maraschino cherries are all baked into a cake. A light, buttery frosting is applied, and the cake is cut into bars for snacking.

1 cup white sugar
¾ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
1 (8 ounce) can crushed pineapple, with juice
2 eggs
½ cup vegetable oil
2 very ripe bananas, mashed
1 teaspoon vanilla extract
¼ cup maraschino cherries, halved
¼ cup butter, melted
1 teaspoon vanilla extract
3 cups confectioners' sugar
4 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

1-1/2 cups mashed ripe bananas (about 3 large)
1 cup sour cream
2 teaspoons vanilla extract
2 cups all-purpose flour

2 jars (10 ounces each) maraschino cherries, drained and chopped
2 cups semisweet chocolate chips
1 package (10 ounces) miniature marshmallows
