MAGIC COOKIE BARS - CAKE MIX VERSION

Magic Cookie Bars - Cake Mix Version image

My mom got this recipe off a cake mix box and we have been making it for years. It is very adaptable, incredibly easy, and very rich.

Provided by AZ to AK

Categories     Bar Cookie

Time 35m

Yield 36 bars

Number Of Ingredients 7

1 (18 ounce) box chocolate cake mix
1/2 cup butter or 1/2 cup margarine, cold & cut into small pieces
1 cup chocolate chips
1 cup butterscotch chips
1 cup chopped nuts
1 cup flaked coconut
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 325.
  • Place cake mix in a medium bowl, cut in the cold butter using a pastry blender. The mixture will remain crumbly.
  • Press mixture into an ungreased 10 X 15 pan.
  • Sprinkle chocolate chips, butterscotch chips, nuts, and coconut over the base.
  • Drizzle sweetened condensed milk over the whole pan.
  • Bake for 25-30 minutes, or until lightly browned.
  • Cool completely and cut into bars. (I like to cut them into large triangles).
  • Note: I have used other cake mix flavors for the base, such as yellow and butter, and they turned out well.

Nutrition Facts : Calories 198.8, Fat 11.1, SaturatedFat 5.5, Cholesterol 10.5, Sodium 184.5, Carbohydrate 24.4, Fiber 1.1, Sugar 18.2, Protein 2.8

Tips:

  • Choose the right cake mix: Not all cake mixes are created equal. Some are better suited for bar cookies than others. Look for a cake mix that is moist and dense, such as a chocolate or pound cake mix.
  • Don't overmix the batter: Overmixing the batter will make the cookies tough. Mix the batter just until the ingredients are combined.
  • Use a 9x13 inch baking pan: This is the standard size for bar cookies. If you use a smaller pan, the cookies will be too thick. If you use a larger pan, the cookies will be too thin.
  • Bake the cookies until they are golden brown: The cookies should be set in the center and a toothpick inserted into the center should come out clean.
  • Let the cookies cool completely before cutting them: This will help the cookies to hold their shape.

Conclusion:

Bar cookies made from cake mix are a quick and easy way to satisfy your sweet tooth. They are perfect for potlucks, bake sales, or just a simple snack. With so many different variations to choose from, there's sure to be a bar cookie recipe that everyone will enjoy.
