Slow-Cooker Barbacoa image

My husband adores this barbacoa, which is beef roast simmered in lime juice, chipotle and cumin. He would eat it one a week if I would make it that often! We have it over rice with cilantro and a spritz of lime. -Aundrea McCormick, Denver, Colorado

Tips:

  • Choose the right cut of meat: Chuck roast, brisket, or short ribs are all good options for barbacoa. These cuts have a lot of connective tissue, which breaks down during cooking and makes the meat tender and flavorful.
  • Use a Dutch oven or slow cooker: These cooking methods allow the barbacoa to cook slowly and evenly, resulting in fall-off-the-bone meat.
  • Add plenty of seasonings: Barbacoa is traditionally made with a blend of Mexican spices, such as chili powder, cumin, oregano, and garlic. You can also add other spices to taste, such as paprika, cayenne pepper, or chipotle powder.
  • Cook the barbacoa until it is fall-apart tender: This can take several hours, but it is worth the wait. The meat should be so tender that it can be easily shredded with a fork.
  • Serve the barbacoa with your favorite toppings: Traditional toppings for barbacoa include tortillas, rice, beans, salsa, guacamole, and sour cream. You can also get creative and add your own toppings, such as pickled onions, roasted vegetables, or shredded cheese.

Conclusion:

Barbacoa is a delicious and versatile dish that can be enjoyed in many different ways. Whether you are making it for a party or a weeknight dinner, these tips will help you make the best barbacoa possible. Experiment with different recipes and find the one that you like the best. With a little practice, you will be able to make barbacoa like a pro!
