BBQ CHICKEN MACARONI AND CHEESE

BBQ Chicken Macaroni and Cheese image

This is a fabulous homemade macaroni and cheese, BBQ sweetened chicken, green onions and a subtle smoky flavor make this a macaroni and cheese perfect for kids and adults alike! Save yourself some time and use a rotisserie chicken for the shredded chicken-you can then use the legs for another meal and the bones for stock! To save more time, microwave the milk to heat it, instead of dirtying another saucepan. This recipe works better with blocks of cheese you shred yourself versus the cheese you buy pre-shredded in bags (but I would argue that for any recipe).

Number Of Ingredients 12

1/4 cup unsalted butter

1 cup low-fat milk
1 1/2 cups shredded reduced-fat cheddar cheese
1 tablespoon grated parmesan cheese
1 small plum tomato, halved
2 tablespoons barbecue sauce
4 skinless, boneless chicken thighs (about 1 pound)

BARBEQUE CHICKEN

Barbeque Chicken image

Chicken baked in a home made barbecue sauce. Very easy. Very good.

Provided by RENA R.

Categories     Meat and Poultry Recipes     Chicken     Chicken Thigh Recipes

Time 1h50m

Yield 12

Number Of Ingredients 10

4 tablespoons water
3 tablespoons ketchup
3 tablespoons brown sugar

1 tablespoon lemon juice
2 tablespoons Worcestershire sauce
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon chili powder
12 chicken thighs, skin removed

  • Place the chicken thighs into an oblong baking dish, and pour the sauce over them. Cover tightly.
  • Bake for 15 minutes in the preheated oven, then reduce the temperature to 300 degrees F (150 degrees C), and bake for one hour. Remove cover, stir and bake uncovered for 15 minutes.

Tips:

  • Use a quality macaroni and cheese. This is the base of the dish, so make sure it's good quality. Look for a brand that uses real cheese and has a good flavor.
  • Cook the macaroni al dente. This means that it should be cooked through but still have a slight bite to it. This will help it hold its shape in the dish.
  • Use a flavorful cheese blend. A combination of sharp cheddar, mozzarella, and Parmesan cheese works well. You can also add other cheeses, such as Gruyère or fontina, to taste.
  • Don't overcook the chicken. Chicken breasts can become dry and tough if they are overcooked. Cook them until they are just cooked through, about 10 minutes per side. You can use boneless, skinless chicken breasts or thighs in this recipe.
  • Make sure the sauce is thick and creamy. The sauce should be thick enough to coat the macaroni and chicken, but not so thick that it's difficult to stir. If the sauce is too thick, you can add a little milk or cream to thin it out.
  • Top the dish with crispy bacon. This is an optional step, but it adds a delicious smoky flavor to the dish. Cook the bacon until it is crispy and then crumble it over the top of the macaroni and cheese.

Conclusion:

Barbecue chicken macaroni and cheese is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great dish to serve at potlucks and parties. With a few simple tips, you can make sure that your barbecue chicken macaroni and cheese is perfect every time.
