Thinly sliced mozzarella (4 ounces total)

Steps:

1/4 cup/60 mL Parmesan cheese
5 to 6 basil leaves
2 teaspoons/10 mL olive oil
1/2 teaspoon/2.5 mL salt
1/2 teaspoon/2.5 mL black pepper

Steps:

  • Gather the ingredients.
  • Preheat grill for medium-high heat.
  • Pound chicken breast until about 1/4 inch thick.
  • Coat with olive oil, salt, and black pepper.

4 boneless skinless chicken breasts (can also use veal cutlets)
1 cup Italian seasoned breadcrumbs
2 eggs
mozzarella cheese
sweet barbecue sauce

Steps:

  • Dip washed, boneless, skinless chicken breasts into beaten eggs.
  • Roll chicken into Italian bread crumbs - cover liberally.
  • Brown chicken in large skillet in butter on medium heat (approximately 8 minutes per side)

Extra-virgin olive oil, for brushing
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
1 cup marinara sauce, store-bought or homemade
4 slices fresh mozzarella
4 tablespoons grated Parmesan

Steps:

  • Preheat an outdoor grill to medium-high. Make sure the grates are clean so the chicken doesn't stick.
  • Arrange a chicken breast between two sheets of plastic wrap. On a work surface, using a meat mallet or small heavy pan, pound the chicken evenly until it is 1/4-inch (6 millimeters) thick. Remove the plastic wrap and transfer to a baking sheet; repeat with the remaining chicken breasts. Brush both sides of each chicken cutlet lightly with oil.
  • Combine the salt, pepper and garlic powder in a small bowl and sprinkle evenly over both sides of the chicken cutlets. Place the chicken cutlets on the grill and cover the grill. 1 bread bowl

¼ cup vegetable oil
¼ cup vinegar
1 tablespoon dried oregano

1 whole chicken, cut into pieces
