2 cups soy sauce
1 1/2 cups sugar cane vinegar
1 teaspoon ground black pepper
1 yellow onion, thinly sliced
2 1/2 pounds boneless chicken thighs, skin on
4 cups sliced green onions
1 cup small-diced yellow onion
1 1/2 cups fresh grated coconut
8 Thai bird's eye chile peppers, stemmed and thinly sliced
1/4 cup fresh lemon juice

Steps:

  • Combine the soy sauce, vinegar, black pepper and sliced onion in a large bowl. Add the chicken and cover the bowl. Refrigerate for at least 8 hours or up to overnight to marinate.
  • Prepare a charcoal grill with natural mesquite charcoal to high heat. Grill the chicken for 10 minutes, then rearrange the pieces to make grill marks and grill 10 more minutes. Flip and cook for a final 10 minutes.
  • Arrange the chicken on a sheet pan and cool in the refrigerator, about an hour.
  • Chop the chicken into 1/2-inch cubes and place in a large mixing bowl. Add the green onions, diced yellow onion, coconut, chile pepper and lemon juice. Toss to combine. Refrigerate.
  • Serve cold.

6 tablespoons butter
6 tablespoons oil
3 medium-size onions, diced
Juice and rinds of 1 1/2 lemons
6 cups ketchup
1 1/2 cups red-wine vinegar
9 tablespoons Worcestershire sauce
3/4 cup brown sugar
1 1/2 teaspoons cayenne pepper
2 tablespoons salt
2 tablespoons dry mustard
5 pounds chicken pieces
2 1/2 quarts barbecue sauce (see Step 1)
1 medium-size onion, peeled and quartered
2 tablespoons corn oil
1/4 cup cider vinegar
1 tablespoon salt
1 tablespoon freshly ground black pepper
1 tablespoon chili powder

Steps:

  • To prepare the sauce, melt the butter with the oil in a straight-side skillet over medium heat. Add onions and cook until lightly browned. Stir in remaining ingredients, including lemon rinds, and simmer 20 minutes. Remove from heat and discard rinds. For a very smooth sauce, puree in blender or food processor.
  • Prepare grill.
  • In a large bowl combine chicken and 1 quart of the barbecue sauce. Rub sauce all over chicken, coating well.
  • Grill 15 minutes on each side. Remove to a platter and set aside until cool enough to handle. Pull chicken from bones in bite-size pieces. Discard bones. (Skin may be saved if you want a very rich sauce. Set it aside.)
  • In a food processor or blender, puree the onion. (If you want to use the chicken skin, puree with the onion.) Warm a large straight-side skillet over medium heat, add the oil, and when hot, add the onion. Cook, stirring frequently, until translucent. Add vinegar, salt, pepper, chili powder and the remaining 1 1/2 quarts of barbecue sauce. Stir well; add the cooked chicken and simmer on low heat 30 minutes.

2 chickens (2 1/2 to 3 pounds each), quartered, with backs removed
1 recipe Barbecue Sauce, recipe follows
1 1/2 cups chopped yellow onion (1 large onion)
1 tablespoon minced garlic (3 cloves)
1/2 cup vegetable oil
1 cup tomato paste (10 ounces)
1 cup cider vinegar
1 cup honey
1/2 cup Worcestershire sauce
1 cup Dijon mustard
1/2 cup soy sauce
1 cup hoisin sauce
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 tablespoon crushed red pepper flakes

Steps:

  • Marinate the chickens in 2/3 of the barbecue sauce for a few hours or overnight in the refrigerator. Heat the coals in a charcoal grill. Spread the bottom of the grill with a single layer of hot coals and then add a few more coals 5 minutes before cooking, which will keep the fire going longer. Place the chicken quarters on the grill, skin side down, and cook for about 45 minutes, turning once or twice to cook evenly on both sides. Brush with the marinade as needed. The chicken quarters are done when you insert a knife between a leg and thigh and the juices run clear. Discard any unused marinade. Serve with extra barbecue sauce on the side.
  • In a large saucepan on low heat, saute the onions and garlic with the vegetable oil for 10 to 15 minutes, until the onions are translucent but not browned. Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin, and red pepper flakes. Simmer uncovered on low heat for 30 minutes. Use immediately or store in the refrigerator.

Five-Ingredient Barbecue Sauce
4 cups thinly sliced red or green cabbage, or a combination
2 scallions, chopped
1/4 cup mayonnaise
1/2 teaspoon celery seed
1 tablespoon apple-cider vinegar
4 seeded hamburger buns, split

Steps:

1 1/2 kg chicken or 1 1/2 kg chicken pieces
3 teaspoons chopped garlic
2 teaspoons salt
2 tablespoons black peppercorns
1 cup finely chopped fresh coriander, including the roots of the coriander (cilantro)
2 tablespoons lime juice
cherry tomatoes
spring onion, curls (green)

Steps:

  • Cut the chicken in half lengthways, and if you like, remove the bones with a small pointed knife, leaving only the wing bones.
  • If using chicken pieces, proceed directly to step 2.
  • Crush the garlic with the salt to a smooth paste.
  • Coarsely crush the peppercorns in a motar and pestle or a blender.
  • Combine in a flat dish with the coriander, and the lime juice.
  • Rub the mixture into the cicken on all sides, cover and refrigerate overnight, or at least an hour.
  • However, this recipe tastes better if refrigerated over night.
  • Barbecue the chicken halves or chicken pieces, turning the chicken every 5 minutes or so, until the chicken is no longer pink and the skin is crisp.
  • If the weather does not permit, you can cook under a grill, (broiler) or in the oven.
  • To serve the boned chicken, diagonally slice the chicken skin side up and place on a serving platter.
  • If using chicken pieces arrange the pieces on a serving platter.
  • Garnish with halved cherry tomatoes and curls of spring (green) onions.
  • Serve with a salad of sliced tomatoes, sliced cucumber and spring (green) onions which have been seasoned with lime juice and salt only.
  • A side dish of steamed rice goes well with this dish.

4 (8 ounce) boneless, skinless chicken breasts
¼ cup red wine vinegar
2 teaspoons kosher salt

½ teaspoon dried rosemary
½ teaspoon garlic powder
¼ cup olive oil
1 drizzle olive oil, or as needed

  • Cut chicken breasts in half lengthwise.
