HERB POTATO SALAD

Categories     side-dish

Time 45m

Yield 6 servings

Number Of Ingredients 12

3 pounds small white boiling potatoes
Kosher salt
2 tablespoons good dry white wine
2 tablespoons chicken stock
2 tablespoons lemon juice
2 garlic cloves, minced
1/2 teaspoon Dijon mustard
Freshly ground black pepper
2/3 cup good olive oil
1/4 cup red onion, finely diced
2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Place the potatoes and 2 tablespoons salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot off the heat and cover with a clean, dry kitchen towel. Leave the potatoes to steam for 15 to 20 minutes, until tender but firm.
  • Meanwhile, in a small bowl, whisk together the wine, chicken stock, lemon juice, garlic, mustard, 2 teaspoons salt and 3/4 teaspoon pepper. Slowly whisk in the olive oil to make an emulsion. Set aside.
  • When the potatoes are cool enough to handle, cut them into quarters or halves, depending on their size. Place the cut potatoes in a large bowl and pour enough dressing over them to moisten. (As the salad sits, you may need to add more dressing.) Add the onion, tarragon and parsley, and salt and pepper to taste. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.

ROASTED POTATO SALAD WITH BARBECUE DRESSING

Roasted Potato Salad With Barbecue Dressing image

If barbecue potato chips were a salad, then this would be it. It's hard to pick which component of this picnic dish is the greater star: the crispy roasted potatoes or the smoky, paprika-tinged barbecue sauce dressing. Bejeweled with crunchy red onions, which are soaked in water to mellow their bite, and showered with fresh dill, this colorful side dish is the savory crowd-pleaser you'll want to bring to any cookout or potluck.

Time 1h

Yield 6 servings

Number Of Ingredients 13

1 1/2 pounds baby potatoes, such as yellow or fingerling, halved (or quartered if large)
1 pint grape tomatoes, halved lengthwise
3 tablespoons olive oil
Kosher salt (Diamond Crystal) and black pepper
1/2 cup finely diced red onion
1 tablespoon barbecue sauce
1 tablespoon mayonnaise
2 teaspoons fresh lemon juice
2 teaspoons honey
1 teaspoon yellow or Dijon mustard
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1 packed tablespoon coarsely chopped fresh dill, cilantro or parsley

Steps:

  • Heat oven to 425 degrees. On a half sheet pan, toss the potatoes and tomatoes with the olive oil, ½ teaspoon salt and ½ teaspoon pepper, and spread in an even layer.
  • Roast, stirring once halfway through, until the potatoes are golden brown and crispy, and the tomatoes have burst and shriveled, about 45 minutes.
  • While the potatoes are roasting, fill a small bowl with cold tap water and add the red onions to soak and mellow out.
  • In a large serving bowl, stir together the barbecue sauce, mayonnaise, lemon juice, honey, mustard, paprika, onion powder and ¼ teaspoon salt until smooth. When the potatoes and tomatoes are done roasting, let them cool for 5 minutes, then transfer to the bowl with the dressing. Drain the red onions and add half to the bowl. Gently toss to combine. Taste for seasoning, adding more salt and pepper as desired. Garnish with the remaining red onions and the fresh dill, and serve.

Tips:

  • Choose the right potatoes: Waxy potatoes like Yukon Gold or Red Bliss hold their shape better than starchy potatoes like Russet potatoes, making them ideal for potato salad.
  • Cook the potatoes properly: Boiling the potatoes until they are tender but still slightly firm is key. Avoid overcooking, as this will make them mushy.
  • Cool the potatoes completely: Before adding the dressing, let the potatoes cool completely. This will help prevent the salad from becoming watery.
  • Use a flavorful dressing: The dressing is what makes a potato salad special. Experiment with different combinations of mayonnaise, mustard, vinegar, and herbs until you find a flavor profile you love.
  • Add mix-ins: Mix-ins like chopped celery, onion, hard-boiled eggs, or bacon can add extra flavor and texture to your potato salad.
  • Chill the salad before serving: Chilling the salad for at least an hour before serving allows the flavors to meld and the salad to firm up.

Conclusion:

With its creamy dressing, tender potatoes, and variety of mix-in options, potato salad is a versatile and crowd-pleasing dish perfect for picnics, potlucks, and summer gatherings. By following these tips, you can create a delicious potato salad that will be the star of any occasion.
