This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

SPINACH AND CHEDDAR SOUFFLé à LA BAREFOOT CONTESSA

Spinach and Cheddar Soufflé à La Barefoot Contessa image

This wonderfully tasty souffle of Ina Garten's is foolproof, I am not kidding! So many of my friends who are not "cooks" have made this - for company or just to impress and it has come out beautifully! To make in advance, prepare the recipe through the step where you add the egg yolks and both the cheeses and the spinach - do thi up to 2 hrs ahead. Keep mixture covered at room temperature then proceed by whisking the egg whites.

GARLIC SAUTEED SPINACH (INA GARTEN)

Garlic Sauteed Spinach (Ina Garten) image

I saw Ina make this super easy side dish a few weeks back. It is easy, delicious and very tasty. From: Food Network / Barefoot Contessa Family Style. The beauty of this that I have halved the recipe and just made enough for the 2 of us.

Provided by Chicagoland Chef du

Categories     Vegetable

Time 10m

Yield 6 serving(s)

Number Of Ingredients 7

1 1/2 lbs baby spinach leaves
2 tablespoons olive oil
2 tablespoons chopped garlic (6 cloves)
2 teaspoons kosher salt, I use less
3/4 teaspoon fresh ground black pepper, to taste
1 tablespoon unsalted butter
1 lemon

Steps:

  • Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
  • In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned.
  • Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. *At this point Ina turned off the flame/ heat source, covered the pan and let it wilt until ready to serve. This is how I made it and it worked beautifully.
  • Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted.
  • Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

SPINACH ARTICHOKE DIP

Spinach Artichoke Dip image

Spinach artichoke dip has a way of inciting controversy. Should it be served cold or hot? Is it lowbrow or classic? Should it be served in a bread bowl or with tortilla chips? Well, the good news is that there are no wrong answers here, only delicious, creamy dip. This particular one is best served hot (or at least room temperature), but it is also acceptable to spread it on crackers after being chilled. And with the inclusion of fresh spinach, it could almost be described as classy. Use canned artichoke hearts; they've got a tangier flavor and better texture than the frozen ones. If you want to go a step further, transfer it to a skillet and run it under the broiler after cooking, which gives you bubbling dip with a golden top.

Categories     easy, quick, dips and spreads, appetizer

Time 25m

Yield 2 to 3 cups

Number Of Ingredients 10

2 tablespoons olive oil
1 large garlic clove, finely chopped
1 12-ounce bunch fresh spinach, finely chopped (or 1 10-ounce package frozen spinach, defrosted, drained and finely chopped)
Pinch of red-pepper flakes (optional)
Kosher salt and black pepper
1 (14-ounce) can quartered artichoke hearts, drained and coarsely chopped
8 ounces cream cheese, cut into 1-inch pieces
4 ounces fresh mozzarella, torn or shredded
4 ounces sour cream or full-fat Greek yogurt
1/4 cup Pecorino Romano or Parmesan, finely grated

Steps:

  • Heat olive oil in a medium pot over medium heat. Add garlic and cook, stirring until it's softened and fragrant, about 30 seconds.
  • Add spinach to pot one handful at a time, letting each handful completely wilt before adding the next. Add crushed red pepper, if using, and season with salt and pepper. Continue to cook, stirring frequently, until most of the liquid from the spinach has evaporated (no need to drain), about 3 minutes. Add artichokes and season with salt and pepper. Cook for a few minutes, just to take the raw edge off the artichokes.
  • Reduce heat to low and add cream cheese and mozzarella. Using a wooden spoon or spatula, stir until all the cheese has melted, about 3 minutes. Stir in sour cream and pecorino, and season with more salt and pepper. You can certainly eat this dip straight from the pot (or transferred to a serving bowl), but running it under the broiler for a crispy top is also an excellent option. To do so, transfer dip to a small ovenproof skillet (6 to 8 inches). Place in oven and broil until the top is golden and the dip is bubbling, 5 to 8 minutes. Let sit a minute or two before serving.

Tips:

  • Use fresh spinach: Fresh spinach provides the best flavor and texture for spinach dip. If you're using frozen spinach, thaw it completely and squeeze out as much excess water as possible before using.
  • Don't overcook the spinach: Spinach should be cooked just until it wilts. Overcooked spinach will become mushy and lose its flavor.
  • Use a variety of cheeses: A combination of cheeses, such as cream cheese, sour cream, Parmesan, and mozzarella, will give your spinach dip a rich and flavorful taste.
  • Add some seasonings: Garlic, onion, salt, and pepper are all classic seasonings that will enhance the flavor of your spinach dip. You can also add other seasonings, such as paprika, cayenne pepper, or cumin, to taste.
  • Top with your favorite toppings: Before serving, top your spinach dip with a variety of toppings, such as crumbled bacon, chopped walnuts, green onions, or tomatoes. This will add extra flavor and texture to your dip.

Conclusion:

Spinach dip is a delicious and versatile appetizer that can be enjoyed by people of all ages. It's perfect for parties, potlucks, or simply as a snack. With so many different recipes to choose from, you're sure to find a spinach dip that you'll love. So next time you're looking for a tasty and easy appetizer, give spinach dip a try. You won't be disappointed!
