OVEN-BAKED BACON

Oven-Baked Bacon image

I always bake bacon in the oven! You just need to plan a bit ahead as the bacon takes longer. With baking, the bacon grease stays nice and clean and you can reuse it to saute vegetables or eggs for extra flavor.

ROASTED SALMON WITH GREEN HERBS

Roasted Salmon With Green Herbs image

This is a great last-minute dinner. I can pick up the salmon on the way home, and I've usually got some herbs in the garden, and the rest of the ingredients in the pantry. Roasting is so much less stressful than grilling and the salmon stays very moist.

Yield Serves 6

Number Of Ingredients 9

1 (2-to 2 ½-pound) skinless salmon fillet
Kosher salt and freshly ground black pepper
¼ cup good olive oil
2 tablespoons freshly squeezed lemon juice
½ cup minced scallions, white and green parts (4 scallions)
½ cup minced fresh dill
½ cup minced fresh parsley
¼ cup dry white wine
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees.
  • Place the salmon fillet in a glass, ceramic, or stainless-steel roasting dish and season it generously with salt and pepper. Whisk together the olive oil and lemon juice and drizzle the mixture evenly over the salmon. Let it stand at room temperature for 15 minutes.
  • In a small bowl, stir together the scallions, dill, and parsley. Scatter the herb mixture over the salmon fillet, turning it so that both sides are generously coated with the green herbs. Pour the wine around the fish fillet.
  • Roast the salmon for 10 to 12 minutes, until almost cooked in the center at the thickest part. The center will be firm with just a line of uncooked salmon in the very center. (I peek by inserting the tip of a small knife.) Cover the dish tightly with aluminum foil and allow to rest for 10 minutes.
  • Cut the salmon crosswise into serving pieces and serve hot with lemon wedges.

Barefoot Contessa's Oven-Roasted Vegetables Recipe - (3.7/5) image

Provided by KathieC

Number Of Ingredients 7

2 small fennel bulbs, tops removed
1 pound fingerling or small potatoes
1/3 cup good olive oil
Kosher salt and freshly ground black pepper
1 pound French string beans (haricots verts), trimmed
1 bunch thin asparagus, ends removed, cut diagonally into 3-inch pieces
1/4 cup freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 425 degrees. Cut the fennel bulbs into 6 wedges each, cutting through the core to keep the wedges intact. Place on a sheet pan. Cut the potatoes in half lengthwise and place them on the pan with the fennel. Drizzle the olive oil on the vegetables, then sprinkle with 2 teaspoons salt and 1 teaspoon pepper. Toss with your hands. Roast the vegetables for 25 to 30 minutes, until the potatoes are tender, tossing once while cooking. Toss the string beans and asparagus with the roasted vegetables and roast for another 10 to 15 minutes, until the green vegetables are tender. Sprinkle on the Parmesan cheese and roast for another minute or two until the cheese melts. Sprinkle with salt and pepper and serve hot.

Tips:

  • Choose the right bacon: Look for thick-cut bacon with good marbling. This will help it cook evenly and stay juicy.
  • Preheat your oven: This will help the bacon cook quickly and evenly.
  • Line your baking sheet with foil or parchment paper: This will make cleanup a breeze.
  • Use a wire rack: This will allow the bacon to cook evenly on all sides.
  • Don't crowd the baking sheet: Give the bacon enough space to cook properly.
  • Cook the bacon until it is crispy: This will take about 15-20 minutes, depending on the thickness of the bacon.
  • Drain the bacon on paper towels: This will help remove excess grease.

Conclusion:

Oven-roasted bacon is a delicious and easy way to cook bacon. It is perfect for breakfast, lunch, or dinner. You can also use it to add flavor to salads, sandwiches, and other dishes. With a few simple tips, you can make perfect oven-roasted bacon every time.
