Categories     Other Side Dishes

Time 1h15m

Number Of Ingredients 11

2 Tbsp butter
1/2 c uncooked barley
1/2 c chopped onion
1 clove garlic, minced
1 can(s) (14.5 oz.) ready-to-serve chicken broth
1 c water
1/2 c uncooked wild rice, rinsed, drained
1/2 tsp grated lemon peel
1/4 c almonds, slivered
2 Tbsp cranraisins
1/8 tsp pepper

Steps:

  • 1. In a medium saucepan, melt butter over medium heat. Add barley; cook 6 to 8 minutes or until lightly browned, stirring occasionally.
  • 2. Add onion and garlic; cook and stir 2 to 3 minutes or until crisp-tender. Add broth and water. Bring to a boil. Stir in rice, lemon peel, almonds, cran-raisins, and pepper; return to a boil. Reduce heat; cover and simmer 50 to 60 minutes or until barley and rice are tender.

Tips:

  • Always rinse the barley and rice before cooking to remove any dirt or debris.
  • Use a heavy-bottomed saucepan or Dutch oven to cook the pilaf. This will help to evenly distribute the heat and prevent the pilaf from burning.
  • Don't overcrowd the pan when adding the barley and rice. If the pan is too full, the pilaf will not cook evenly.
  • Bring the pilaf to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the barley and rice are tender and the liquid has been absorbed.
  • Fluff the pilaf with a fork before serving.
  • Garnish the pilaf with fresh herbs, such as parsley, cilantro, or mint.

Conclusion:

Barley rice pilaf is a delicious and versatile dish that can be served as a side dish or main course. It is a good source of fiber and protein, and it is also a low-calorie dish. With its nutty flavor and chewy texture, barley rice pilaf is a great way to add variety to your meals.
