BASIC TOMATO SAUCE

This sauce can be frozen for a couple of months, or refrigerated for up to a week, and is the basis of a lot of dishes.

Categories     Sauces     Tomato     Sauces & condiments

Time 1h10m

Yield 6 to 8

Number Of Ingredients 8

1 large clove of garlic
olive oil
1 small dried red chilli
2 teaspoons dried oregano
3 x 400 g tins of quality Italian plum tomatoes
1 tablespoon red wine vinegar
1 handful of fresh basil, or marjoram
extra virgin olive oil

Steps:

  • Peel and finely chop the garlic, then gently fry in a thick-bottomed pan with 2 tablespoons of olive oil. Crumble in the chilli, add the oregano and tomatoes.
  • Mix gently, but do not break up the tomatoes as this will release the pips, which will make the sauce slightly bitter - by leaving the tomatoes whole and letting the mixture cook slowly you'll get a nice sweet sauce. (You can remove the pips from the tomatoes if you want, but I don't bother.) Bring to the boil and simmer gently for 1 hour.
  • Add the vinegar to the pan, then stir and chop up the tomatoes in the sauce.
  • Pick the basil or marjoram and roughly chop, then add to the pan.
  • Season well to taste with sea salt and black pepper, and finish with 2-3 tablespoons of extra virgin olive oil.

SPICY TOMATO-BASIL SAUCE

Spicy Tomato-Basil Sauce image

Provided by Kate Fogarty

Categories     Sauce     Blender     Onion     Tomato     Vegetarian     Low Cal     High Fiber     Basil     Pine Nut     White Wine     Healthy     Low Cholesterol     Bon Appétit

Yield Makes about 4 1/2 cups

Number Of Ingredients 10

4 1/2 cups canned crushed tomatoes with added puree (from two 28-ounce cans), divided
1/4 cup pine nuts
4 1/2 tablespoons extra-virgin olive oil
3/4 cup finely chopped onion
4 large garlic cloves, minced
1 teaspoon fennel seeds (finely crushed in plastic bag)
3/8 teaspoon (or more) dried crushed red pepper
1/2 cup finely chopped fresh basil, divided
1/3 cup dry white wine
1 teaspoon dried oregano

Steps:

  • Freshly ground black pepper Place 1 cup crushed tomatoes in blender. Add pine nuts and blend until very smooth, about 1 minute.
  • Heat oil in heavy large pot over medium-low heat. Add onion, garlic, fennel seeds, and 3/8 teaspoon dried crushed red pepper. Sauté until onion is soft, about 5 minutes. Add remaining crushed tomatoes, 2 tablespoons chopped basil, wine, and oregano. Scrape in tomato mixture from blender and stir to combine. Simmer sauce until flavors blend, 5 to 6 minutes. Season to taste with salt, pepper, and more dried crushed red pepper, if desired. DO AHEAD: Can be made 1 day ahead. Cool, cover, and chill.
  • Rewarm sauce. Mix in remaining chopped basil.

Tips:

  • Use ripe, flavorful tomatoes. This will give your sauce the best possible flavor. If you can, use fresh tomatoes from your garden or a local farmer's market.
  • Don't overcrowd the pan. When you're cooking the tomatoes, make sure they're in a single layer in the pan. This will help them cook evenly and prevent them from stewing.
  • Simmer the sauce for at least 30 minutes. This will help the flavors to meld and develop.
  • Taste the sauce as you go. Adjust the seasonings to your liking. You may want to add more garlic, salt, pepper, or oregano.
  • Serve the sauce over your favorite pasta. Or use it as a dipping sauce for bread or vegetables.

Conclusion:

This basic spicy tomato sauce is a versatile recipe that can be used in a variety of dishes. It's perfect for pasta, pizza, or as a dipping sauce. With just a few simple ingredients, you can create a delicious and flavorful sauce that will be a hit with your family and friends.
