1 1/2 pounds fresh green beans
1 tablespoon sugar
1 tablespoon and 1 teaspoon salt
1 recipe Garlic-Basil Dressing, recipe follows
5 firm ripe tomatoes, sliced
4 sprigs fresh basil, for garnish
1 clove garlic
1 shallot
2 tablespoons water
1 1/2 teaspoons salt
1/8 teaspoon freshly ground black pepper
2 tablespoons Dijon mustard
1 tablespoon sugar
3/4 cup canola, corn or vegetable oil
15 fresh basil leaves

Steps:

  • Leave the pointed tips on the green beans, but snap off the stem tips. Wash. Bring a large pot of water to a boil. Add the sugar and 1 tablespoon salt. Drop in the green beans and cook until crisp-tender, about 6 to 7 minutes. Drain the beans and plunge them into ice water to stop cooking. Drain well and refrigerate.
  • When ready to serve, toss the green beans with 1/3 cup of the dressing in a large mixing bowl. Taste and add more dressing or salt as needed. Pile the beans high in the center of a large white platter. Arrange the tomato slices overlapping around the edge. Sprinkle the tomatoes with remaining salt and drizzle 3 tablespoons of the dressing on top of them. Garnish with basil sprigs. Serve immediately.
  • Turn on the processor fitted with the steel blade and drop the garlic and shallot down the feed tube onto the spinning blade to mince. Add the water, salt, pepper, mustard, and sugar. With the processor running, slowly drizzle in the oil. Add the basil leaves and coarsely chop with several on/off pulses.

3 cups fresh corn kernels (3-4 ears)
1 lb fresh green beans, trimmed and cut in half
1 small red onion, cut half then into thin slices
1 garlic clove
1/4 cup red wine vinegar
1/3 cup extra virgin olive oil
1 pint cherry tomatoes, cut in half
1 cup fresh basil, roughly chopped
fresh ground pepper, to taste
kosher salt, to taste

Steps:

  • Cut the corn kernels from the ears, while bringing a pot of water to a boil.
  • When the water comes to a boil, add the corn kernels and blanch for about 1 minute. Remove them with a strainer and set aside.
  • Let the water return to a boil and season generously with salt. Add the beans and cook until tender, about 3 minutes. Drain the beans and flush with cold water until they are cool.
  • Meanwhile, put the onion slices in a bowl of ice water, which will crips them and mellow their flavor.
  • Using either a mortar and pestel or the flat side of a chef's knife, mash the garlic to a paste with a pinch of salt.
  • Add the paste to a small bowl (or leave it in the mortar) and whisk in the vinegar and let sit for 10 minutes. Add the olive oil and whisk again.
  • Just before serving, drain the onions. Put the beans, corn, onions, tomatoes, and basil in a large bowl. Season with salt and pepper, and then toss with the vinaigrette. Season further if required. Serve right away.

4 heads roasted garlic, cloves squeezed out (Oven roasted: tops cut off, drizzled with olive oil, seasoned, wrapped in foil, roasted at 350 degrees F for 45 minutes, until soft and colored)
2 cups white beans, soaked in water overnight, drained
8 cups chicken stock
4 large croutons
Thai Basil Shrimp Salad, recipe follows
1/2 pound rock shrimp
Canola oil, to cook
2 limes, juiced
2 minced Thai bird chiles
1 minced shallot
1 tablespoon fish sauce
1 tablespoon sugar
2 tablespoons canola oil
1/3 cup Thai basil chiffonade, save 1 tablespoon, for garnish
Salt and black pepper
Italian bread croutons, sliced 1-inch thick

Steps:

  • In a casserole on medium heat, cook the bacon crisp then drain on paper towels. Leave bacon fat in casserole and add onions to brown, 6 to 8 minutes. Season and add thyme, roasted garlic, and beans. Stir, then add stock and chopped bacon, and bring to a boil. Check for flavor. Place cover ajar and simmer for 45 minutes until beans are very soft. Using a hand blender, puree the soup until smooth. Check again for seasoning.
  • In a large pasta bowl, ladle soup and place crouton in the center. Place a small mound of the salad on the crouton and garnish with basil chiffonade.

  • In a hot skillet coated with oil, saute the shrimp and season. Cook 3 to 4 minutes until done and set aside.

1/2 cup chopped green curly leaf lettuce or red leaf lettuce
2 tablespoons coarsely chopped basil
1/3 cup ricotta salata, shaved into irregular 1-inch shards with a vegetable peeler
4 chive flowers, broken into pieces, or 1 tablespoon chives in 1/2-inch slices
Pumpkinseed oil, for sprinkling

Steps:

  • Bring a large pot of generously salted water to a boil. Add haricots verts, and cook until tender but still slightly crisp, about 3 minutes. Drain, then cool under cold running water. Cut into 1-inch pieces (there should be about 1 cup). Set aside.

1 1/2 c orzo pasta, uncooked
1 can(s) garbanzo beans, drained and rinsed
1 1/2 c mixed red and yellow teardrop or grape tomatoes, halved
1/2 c fresh basil, chopped
1/4 c fresh mint, chopped
1/2 c blush wine vinaigrette ( i use brianna's brand, in the salad dressing section)
salt to taste
fresh ground black pepper to taste

  • 1. Bring broth to a boil in a large heavy sauce pan over high heat. Stir in Orzo. Cover partially and cook stirring frequently until the orzo is tender but still firm to the bite. About 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely. Toss the orzo with the rest of ingredients and enough blush vinaigrette to coat. You may not use all the vinaigrette. Salad:
2 ears fresh corn or 1 c. frozen corn, thawed
1 can black beans, drained and rinsed
1 can garbanzo beans, drained, rinsed
1 red bell pepper, cut in 1/2" pieces
1 mango, peel, seed, cut in 1/2" pieces
Vinaigrette:
2 limes, zested and juiced
2 tablespoons balsamic vinegar {1oz}
1/2 cup chopped fresh basil leaves
1 teaspoon ground cumin
1/3 cup extra-virgin olive oil {2.5oz}
Kosher salt and fresh ground black pepper

Steps:

  • FOR THE SALAD: Preheat gas or charcoal grill. Peel back the corn husks. Remove silks and replace husks. Soak corn in cold water for 30 minutes. Drain and place on grill for 10-15 minutes. Cool completely and remove husks. Using a sharp knife, remove corn kernels. In a medium bowl, mix together grilled corn, black beans, garbanzo beans, bell pepper and mango. FOR THE VINAIGRETTE: In a small bowl, combine lime zest, lime juice, balsamic vinegar, basil and cumin. Slowly add oil, whisking constantly until the mixture thickens. Season with salt and pepper, to taste. Pour vinaigrette over salad and toss well. Refrigerate for 1 hour, and toss again, before serving
