2 cups unrinsed Basmati rice
3 cups cold water

Steps:

  • Put basmati and cold water in a 3-quart microwave-safe dish and cook on high, uncovered, 15 minutes, or until steam holes appear in rice. Cover dish and cook on high 5 more minutes. Let rice stand, covered, 5 minutes and fluff with a fork. You'll note that using the microwave shaves only five minutes off the traditional stove-top method, but faster is not the issue here. 1 ¾ cups water
1 cup basmati rice
¼ cup frozen green peas
1 teaspoon cumin seeds

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • When rice is cooked, stir in peas and cumin. Cover and let stand for 5 minutes.

Found this recipe on a bag of Basmati Rice from Sams and I feel like a genius! I am not even that crazy about rice but I can stuff this stuff down! I have made it several times now (had to before I posted it, would have been afraid not to!). What I like most about it is it turns out the same EVERY time. Takes the stress out of it!

1 cup rice (I prefer Basmati)
2 cups water
1 tablespoon olive oil
1 pinch salt

Steps:

  • Rinse measured rice 1 to 2 times to remove starch. I use a strainer.
  • Place measured rice, water, oil, and salt in a microwaveable casserole dish (make it a big one so it does not boil over) cover with lid or plastic wrap allowing a little steam to release.
  • Microwave on high for 10 minutes. Stir and recover. Then microwave on defrost setting for 9-10 minutes (If you have to enter a weight my microwave hits 9 minutes at 1.2 lbs.
  • Fluff with a fork before serving.
