3 tablespoons sweet paprika
2 tablespoons olive oil
12 skewers
2 cups hickory smoke chips, soaked in water 30 minutes, drained
Basque Tomato Sauce

Steps:

  • Cook potatoes in large pot of boiling salted water until tender, about 15 minutes. Drain. Cool completely.
  • Cut potatoes in half. Combine potatoes, tuna, paprika and oil in large bowl. Sprinkle with salt. Toss to coat. (Can be made 1 day ahead. Cover and chill.) Alternate potato halves and tuna on skewers.
  • Prepare barbecue (medium-high heat). Place smoke chips in 8 x 6-inch foil packet with open top. Set atop coals 5 minutes before grilling kebabs. Grill kebabs until tuna is just cooked through, turning occasionally, about 8 minutes.
  • Spoon Basque Tomato Sauce onto plates. Arrange kebabs atop sauce; serve.

Tips:

  • Use ripe, flavorful tomatoes. This will give your sauce the best possible flavor. If you can, use tomatoes that are in season and locally grown.
  • Roast your tomatoes before making the sauce. Roasting the tomatoes will caramelize their sugars and give them a deeper, richer flavor. You can roast the tomatoes in the oven or on the grill.
  • Add a little bit of heat to your sauce. This will help to balance out the acidity of the tomatoes. You can add heat by using chili peppers, cayenne pepper, or paprika.
  • Season your sauce to taste. Add salt, pepper, and other spices until the sauce tastes just the way you like it.
  • Let your sauce simmer for a while. This will help to develop the flavors and thicken the sauce.
  • Serve your sauce over your favorite pasta, rice, or vegetables. You can also use it as a dipping sauce for bread or crackers.

Conclusion:

Basque tomato sauce is a delicious, versatile sauce that can be used in a variety of dishes. It is easy to make and can be customized to your own taste preferences. Whether you are looking for a simple, everyday sauce or a special occasion dish, Basque tomato sauce is sure to please.
