This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

Tips:
- Choose the right ribs: Look for meaty ribs with a good amount of marbling. Baby back ribs are a popular choice, but you can also use spare ribs or St. Louis-style ribs.
- Prepare the ribs: Remove the membrane from the back of the ribs. This will help the ribs cook evenly and make them more tender.
- Make the rub: Combine the spices and herbs in a bowl. Rub the mixture all over the ribs, making sure to get into all the crevices.
- Cook the ribs: Preheat your smoker or oven to the desired temperature. Cook the ribs for several hours, or until they are tender and fall off the bone.
- Make the sauce: While the ribs are cooking, make the sauce. Combine the ingredients in a saucepan and bring to a simmer. Let the sauce simmer for at least 30 minutes, or until it has thickened.
- Glaze the ribs: Brush the ribs with the sauce during the last 30 minutes of cooking. This will help the ribs caramelize and give them a delicious glaze.
