1 pound ground chicken breast
1/4 cup cheddar cheese (grated)
1/4 cup prepared BBQ sauce (homemade or store-bought)
1 teaspoon paprika
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon canola oil
4 whole wheat burger buns
Coleslaw
Pickled red onions
Extra cheddar cheese
Extra BBQ sauce

Steps:

  • Mix together burger ingredients in a medium bowl until evenly combined. Do not overmix.
  • Shape burger mixture into 4 equal sized patties.
  • Heat canola oil over medium heat. in a large skillet Add the patties and cook 6-7 minutes, then flip and cook an additional 5-6 minutes, until cooked through.
  • Serve on burger buns with desired toppings.

1 tablespoon adobo sauce
1 teaspoon smoked paprika
1 3/4 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
2 1/2 cups shredded coleslaw mix (from 1 [12-oz.] pkg.)
1/3 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon granulated sugar
Cooking spray
1/4 cup barbecue sauce, divided
4 hamburger buns, split and lightly toasted
8 teaspoons yellow mustard
12 hamburger dill pickle chips

Steps:

  • Mix together chicken, adobo sauce, paprika, 1 teaspoon of the salt, and 3/4 teaspoon of the pepper in a large bowl using your hands. Shape into 4 (3/4-inch-thick) patties. Arrange patties between 2 sheets of wax paper on a baking sheet; freeze 15 minutes.
  • Meanwhile, stir together coleslaw mix, mayonnaise, vinegar, sugar, and remaining 3/4 teaspoon salt and 1/4 teaspoon pepper in a bowl until thoroughly combined.
  • Heat a grill pan over medium-high; generously coat with cooking spray. Add patties to pan; cook until a thermometer inserted in thickest portion of patties registers 165°F, about 5 minutes per side. Transfer to a plate; immediately brush tops evenly with 2 tablespoons of the barbecue sauce.
  • Spread cut sides of bottom bun halves evenly with mustard; top with patties, slaw, pickles, and remaining 2 tablespoons barbecue sauce. Replace top bun halves.

1 onion, chopped
2 teaspoons minced garlic
1 red bell pepper, chopped
1 cup fresh sliced mushrooms
1 tomato, seeded and chopped
2 carrots, chopped
2 pounds ground chicken
1 egg
½ cup fresh bread crumbs
1 tablespoon Old Bay (tm) Seasoning
kosher salt to taste
black pepper to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil grate.
  • Lightly spray a saute pan with cooking or oil spray over medium heat. Saute the onion with the garlic first, then the bell pepper, then the mushrooms, tomatoes and carrots, all to desired tenderness. Set aside and allow all vegetables to cool completely.
  • In a large bowl, combine the chicken and vegetables. Add the egg, bread crumbs and seasonings to taste. Mix all together well and form into 8 patties.
  • Grill over medium heat for 5 to 6 minutes per side, or to desired doneness.

4 skinless, boneless chicken breasts
4 rashers bacon (optional)
4 large burger buns , sliced in half
lettuce , tomato and red onion, to serve
4 tbsp tomato ketchup
4 tbsp brown sauce
splash chilli sauce (optional)
2 tsp clear honey
2 garlic cloves , crushed

Steps:

  • Make the sauce and marinade by mixing everything together in a large bowl, then put a few spoonfuls aside. Slice halfway into the thickest part of each breast and open it up like a book. Flatten down slightly with your hand, then toss in the bowlful of marinade to coat. Chill for as little, or as long, as you have time to.
  • Barbecue the chicken for about 10 mins until completely cooked through, turning so it doesn't burn but is nicely charred and sticky. Cook the bacon at the same time until crisp, if using, and toast the buns. Assemble the burgers with lettuce, slices of tomato, onion and the reserved sauce on the side for dolloping on top.

1 tablespoon butter, cut into pieces
1 small red onion, 1/2 finely chopped, 1/2 thinly sliced
2 cloves garlic, finely chopped
2 tablespoons tomato paste
1 teaspoon sugar
1 tablespoon Worcestershire sauce, eyeball it
1 tablespoon hot sauce, eyeball it
1 1/4 pounds ground chicken
1 tablespoons grill seasoning (recommended: McCormick brand) a palm full
3 tablespoons extra-virgin olive oil, divided
2 tablespoons honey, eyeball it
1 lemon, juiced
3 rounded tablespoons sweet pickle relish
2 cups shredded cabbage mix
Salt and pepper
4 cornmeal Kaiser rolls, split

Steps:

  • In a small skillet over medium heat, melt butter. Add chopped onions, garlic and tomato paste and sweat them for 5 minutes to soften and sweeten. Sprinkle in sugar and remove from heat. Cool in a bowl, 5 minutes. Add tomato paste mixture, Worcestershire, hot sauce to bowl and combine. Add chicken to the bowl then grill seasoning and combine the burgers well to evenly distribute the flavors and form 4 patties. Wash up.
  • Heat 1 tablespoon extra-virgin olive oil, a turn of the pan, in a nonstick skillet over medium-high heat. Cook patties 6 minutes on each side.
  • Combine the honey, lemon juice, and remaining extra-virgin olive oil in a bowl. Add relish, cabbage mix and sliced onions and season with salt and pepper. Toss the slaw to coat and reserve.
  • Serve burgers on bun bottoms topped with slaw and bun tops.

His are made with the addition of lots of cooked vegetables to add flavor and moisture, while some breadcrumbs help keep the juices in. Make sure to cook over medium heat or they will dry out!! 1 small onion, finely chopped
1/2 small red bell pepper, seeded and finely chopped
4 ounces white mushrooms, thinly sliced (1 cup)
1 medium carrot, peeled and coarsely shredded
1 garlic clove, finely chopped
4 ripe roma tomatoes or 4 plum tomatoes, seeded and cut into 1/2 inch cubes
1/4 cup seasoned dried breadcrumbs
2 tablespoons freshly grated parmesan cheese
1 large egg, beaten
1 teaspoon salt
1/8 teaspoon fresh ground black pepper
1 1/2 lbs ground chicken or 1 1/2 lbs ground turkey
6 soft hamburger buns or 6 ciabatta rolls, for serving

Steps:

  • Spray a large nonstick skillet with oil and heat over medium-high heat.
  • Add the onion, red pepper and mushrooms and cover.
  • Cook, stirring occasionally, until the vegetables soften, about 3 minutes.
  • Add the carrot and garlic and stir, uncovered, for 1 minute.
  • Add the tomatoes and cook just until heated through, about 2 minutes.
  • Transfer to a large bowl and cool completely.
  • Add the breadcrumbs, cheese, egg, salt and pepper and mix well.
  • Add the ground chicken and mix just until combined.
  • Cover and refrigerate for at least 1 hour or up to 4 hours.
  • Meanwhile, build a charcoal fire in an outdoor grill and let the coals burn down until medium-hot (you should be able to hold your hand just above the cooking grid for 3 seconds).
  • Or, preheat a gas grill on High, then turn to medium.
  • Shape the chicken mixture into six 4-inch-wide patties.
  • Lightly oil the grill.
  • Grill the burgers, turning once, just until they feel firm when pressed in the centers (the meat should bounce back), about 12 minutes.
