This is one of my husband's favorite dishes. It isn't exactly healthy, but it is fabulous. It is a common dish in Louisiana. This recipe feeds a lot of people. You can cut it in half for a family dinner.

5 pounds medium shrimp, with shells
2 pounds butter
1 medium sweet onion, minced
8 cloves garlic, minced
2 stalks celery, diced
¼ cup chopped fresh parsley
2 tablespoons Creole seasoning
2 tablespoons dried rosemary
ground black pepper to taste
½ cup Worcestershire sauce
2 teaspoons fresh lemon juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Arrange the shrimp in a single layer in as many baking dishes as you need. Set aside.
  • Melt 1/2 cup of butter in a large skillet over medium heat. Add the onion, garlic, celery, parsley, Creole seasoning and rosemary. Cook and stir for a few minutes, until onion is tender. Add the rest of the butter and cook until melted over low heat. Stir in the pepper, Worcestershire sauce and lemon juice. Pour this mixture over the shrimp so that the shrimp are completely submerged.
  • Bake in the preheated oven until shrimp are pink, 15 to 20 minutes.

Steps:

  • Take the butter, cut into thirds, and melt in a large saucepan over medium heat until melted. Next, add the green onions, Worcestershire sauce, crab boil, cayenne, red pepper flakes, salt, black pepper, thyme, garlic, bay leaves and 5 to 6 shakes hot sauce. Cut the lemon in half, squeeze the juice in and then drop the lemon halves into the pan. Bring to a boil, but there should be no smoke. Add the shrimp in flat rows on top. Cook until pink, about 2 minutes per side. Pour everything onto a plate and serve.

3 garlic cloves, minced (1 tablespoon)

1 1/2 teaspoons hot sauce, such as Tabasco

  • Heat a 12-inch skillet (preferably cast-iron) over medium-high heat. Add butter, and cook until melted and foamy. Add garlic, rosemary, and lemon juice and rinds. Stir in Worcestershire and hot sauces, and bring to a simmer.
  • Season shrimp with salt and pepper; add to skillet. Cook until pink and firm to the touch, 3 to 4 minutes. Season with pepper. Serve with baguette.

2 tablespoons butter
1/2 cup finely chopped onions
1 small jalapeno, seeded and chopped

1/2 cup dark brown sugar
1/4 cup orange juice
1 cup ketchup
16 colossal shrimp, shelled with tail on, deveined (about 1 1/4 pounds)
4 slices bacon

Steps:

  • Preheat grill to medium.
  • Soak skewers in water while preparing the BBQ sauce. In a medium saucepan melt butter and saute onions and jalapeno, until tender. Season with cayenne, and salt and pepper. Add ginger, brown sugar, orange juice and ketchup in that order making sure to blend each ingredient completely before adding the next ingredient. Let simmer until the edges begin to caramelize, about 15 minutes. Set aside and let cool. Once cool, remove half of the sauce and reserve for dipping. The other half is for brushing on the shrimp when grilling. Cut bacon in thirds. Thread each shrimp onto a skewer, starting from the tail end. Bend the shrimp as you thread it so it lies in 1 straight line on the skewer, removing its natural curve. Wrap the center of each shrimp with a piece of bacon. Brush with BBQ sauce and place skewers with bacon, seam side down, onto the grill. Cook over medium heat until bacon crisps and shrimp is cooked through, about 8 minutes.

6 ounces good beer (microbrewery is preferable to mainstream swill)
5-10 cloves garlic, finely minced (or as much as you like)
1 medium onion, very finely minced
3 ribs celery, very finely minced
3-4 tbs chopped parsley
2 tsp fresh-squeezed lemon juice
5 pounds shrimp, heads and shells on.

Steps:

  • [This feeds 8-10 people, BTW ... cut it in half if you need to.] Melt a stick of the butter in a skillet. Sauté the garlic, onions, celery, parsley, rosemary and seasoning blend for about 2 - 3 minutes. Melt the rest of the butter. Add the beer (drink the rest of the bottle). Add the sauteed stuff, Worcestershire and lemon juice. Drown the shrimp in the seasoned butter, using as many baking dishes as you need. Make sure the shrimp are more or less submerged. 1/2 small carrot, peeled and cut into thin strips
Some cilantro leaves, coarsely chopped
Some mint leaves, coarsely chopped

1 cup Abita or other amber beer

1 loaf French bread, thickly sliced on the diagonal and warmed

Steps:

  • In a large skillet over medium heat, melt the butter and sauté the garlic until lightly browned and fragrant, 1 to 2 minutes. Add the shrimp and cook for 1 minute on each side. 1/4 teaspoon freshly ground black pepper
1 stick butter
8 ounces butter
1 cup vegetable oil
2 tablespoons smoked paprika
1 tablespoon dried rosemary
1 teaspoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/2 teaspoon crushed chipotle pepper
1 tablespoon lemon juice
1 clove garlic, crushed
1/2 stick butter
1 cup freshly cut corn kernels
1 tablespoon fresh rosemary needles, finely chopped

Steps:

  • For the grits: Combine 4 cups water, the cream, Worcestershire sauce, hot sauce and salt, and bring to a boil. In a medium bowl combine the grits, onion powder, garlic powder and pepper. Add the dry ingredients to the boiling liquid, whisking vigorously. Lower the heat to a simmer and cook for 45 minutes. Whisk regularly, every 3 to 5 minutes, so the grits do not stick and burn.
  • Remove from the heat and add the butter, whisking until it's completely incorporated into the grits.
  • For the BBQ sauce: Combine the oil and butter and melt over medium heat. Add the paprika, rosemary, oregano, salt, black pepper and chipotle, and bring to simmer for 15 minutes. Add the garlic and simmer 5 minutes, not letting the garlic brown. Remove from the heat and add the lemon juice. Strain and discard the solids (they will burn if you cook the shrimp with them).
  • For the corn: Melt the butter in a medium saute pan and add the corn. Add the sugar and some salt and pepper and cook until the corn is bright yellow and just cooked through.
  • Pour the BBQ sauce in a medium heavy-bottomed saucepan and add the shrimp. Cook, stirring regularly until firm to the touch, 3 to 4 minutes.
  • Divide the grits among four serving bowls and add 5 shrimp per bowl. Drizzle some BBQ sauce over the grits and sprinkle some corn on top. Garnish each bowl with a slice of lemon and then serve.

I perfected my BBQ shrimp recipe after cobbling together elements of many other recipes. BBQ shrimp is a classic New Orleans dish, purportedly invented at Pascal's Manale. It's not an accurate name, though - there is no barbecue sauce involved and the shrimp don't go anywhere near a grill. Having fresh shrimp is very important! The Abita imparts a unique flavor, too - if you can get Abita in your area, definitely use it, but if you need to substitute, choose a mild amber ale. Nothing too hoppy and nothing too plain. This recipe will serve 4 as a main dish or up to 8 as an appetizer. This is a dish you eat with your hands - messy and fun!

2 lbs shrimp, whole, fresh (heads AND tails attached)
1/2 large yellow onion, diced
4 garlic cloves, smashed
1 cup butter, cut into small pieces
4 tablespoons olive oil
4 dashes Worcestershire sauce
1 (12 ounce) bottle beer, Abita Amber Ale
1 large lemon (juice and zest)
2 teaspoons garlic powder
2 teaspoons crab boil (I like Zatarain's)
fresh cracked pepper
coarse sea salt
cayenne pepper (optional)

Steps:

  • Put the shrimp in one layer in a shallow baking dish that can go in the broiler and sprinkle lightly with coarse sea salt.
  • Dice the onion up and smash the garlic really well with the flat side of a big knife. Don't cut up the garlic, just smash it.
  • Heat the olive oil in a saucepan and saute the onions until they're translucent.
  • Add the smashed garlic, lemon zest, and the butter to the saucepan. Stir it up.
  • Once the butter has melted, add all the seasonings - garlic powder, crab boil, LOTS of cracked pepper (I don't know my exact measurement but I'd say probably 30 "cracks" of the pepper cracker), and 4 big slugs from the Worchestershire sauce bottle. Keep stirring.
  • Taste to see if it's spicy enough for you, and if it isn't, add some cayenne - there's cayenne in the crab boil, but some people like a higher level of spiciness than the crab boil can provide.
  • Dump in 2 more tablespoons of olive oil and the juice of the lemon while continuously stirring.
  • Add half of the beer (keep stirring!) and drink the rest (while stirring.) Once all the foam from the beer is gone and it's bubbling again it's ready.
  • Pour the sauce over the shrimp in the baking dish, stir it around, and put it in the broiler.
  • Broil for 8 minutes and then stir it up and broil for 5 more minutes (longer if your shrimp are super gigantic) until the shrimp look done (nice and pink) and you have some good brown crusties on top. The shallower your dish is the better it will be - you want the sauce to almost just barely-ish not cover the shrimp so the little bit of exposed surface browns.
  • Let it rest for 10 minutes before eating. Serve in a bowl with tons of sauce and hot french bread for dipping!

Melt the butter in small saucepan over medium-low heat. Add the spice mixture and cook until fragrant, stirring frequently, about 3 minutes. Let cool, then toss the shrimp with the butter and spices and let sit for 15 minutes.
  • Lay the bacon across grates of a grill and grill until crisp, 2 to 3 minutes per side. Set aside on paper-towel-lined plate.
  • Grill the shrimp until charred, 1 to 2 minutes per side. Let rest, then chop each shrimp into 3 smaller chunks.
  • For the remoulade: Mix together the mayonnaise, capers, hot sauce, lemon juice, mustard, parsley, relish and garlic in a bowl and season with salt and black pepper.
  • Mix together the avocados, tomatoes and orange juice. Season with salt and black pepper. Schmear a tablespoon of remoulade on each tortilla and top with avocado and tomatoes, 2 slices of bacon and some grilled shrimp. Tightly wrap and serve with extra remoulade for dipping.

4 lbs large shrimp, in the shell see note (21 to 25 count or per pound, fresh or frozen)
3 tablespoons cajun spices
1 tablespoon black pepper
1 tablespoon dried rosemary
1 tablespoon salt
2 teaspoons salt, divided
1/2 lb butter
1 large onion, peeled and finely chopped
6 garlic cloves, peeled and minced
1 cup beer
1 cup extra virgin olive oil
4 tablespoons light brown sugar
1/2 cup Worcestershire sauce
1 lemon, sliced
3 tablespoons fresh lemon juice
3 bay leaves
2 teaspoons dried oregano
2 teaspoons dried thyme leaves
1 teaspoon cayenne pepper
3 -5 dashes louisiana hot sauce

Steps:

  • Combine 3 tablespoons of the cajun spice and 1 tablespoon of the salt in a small bowl.
  • Rub the shrimp with this mixture.
  • Place the shrimp in a plastic baggie and refrigerate while you make the sauce.
  • In a saucepan set over medium-high heat, melt the butter.
  • Add the onion and garlic and cook for 3 to 5 minutes, until soft, but not browned.
  • Add the beer, oil, brown sugar, Worcestershire sauce, lemon, lemon juice, bay leaves, oregano, thyme, and cayenne, as well as the pepper, rosemary and 2 teaspoons salt.
  • Stir to mix.
  • Reduce the heat to a simmer, and cook, covered, stirring occasionally, for about 20 minutes, or until thick.
  • Remove from the heat, uncover, and cool to room temperature.
  • Remove and discard the lemon slices and bay leaves.
  • Pour 1 1/2 cups of the sauce over the shrimp.
  • Toss to coat well.
  • Cover and refrigerate the shrimp for 1 to 2 hours.
  • Cover and refrigerate the remaining sauce separately and save for dipping.
  • Prepare a charcoal fire or preheat a gas grill for direct grilling over high heat.
  • While the grill is heating, reheat the remaining sauce making sure that it doesn't burn.
  • Remove the shrimp from the pan and discard the marinade.
  • Grill the shrimp for 2 to 3 minutes per side, until the shells are pink.
  • Don't overcook or they will get tough.
  • Serve with the warm sauce for dipping.

In this case, I think he just wrote "creole seasoning" when in fact, this stuff tastes most authentic with a spice they sell around here in the restaurant and in stores called "Cajun Foreplay." Use it generously. Either way these are delicious, especially served with Dinosaur BBQ Cocktail Sauce (recipe # 295318). Not for wimps!

1/2 cup cider vinegar
2 cups water
2 tablespoons Old Bay Seasoning
2 lbs shrimp, in shell large
2 tablespoons garlic, pressed (or garlic powder, to taste)
2 tablespoons creole seasoning (use Cajun Foreplay if possible)

Steps:

  • Pour beer, vinegar, and water, and Old Bay in a pot over medium to high heat and cover.

1 cup prepared barbecue sauce

4 slices turkey bacon, cooked until crisp and crumbled
1/2 cup sliced black olives
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded mozzarella cheese
3 tablespoons cider vinegar
2 tablespoons olive oil
1 teaspoon Dijon mustard
1/2 cup raisins
1/4 cup crumbled blue cheese
Salt and freshly ground black pepper
1 packaged coleslaw mix

Steps:

  • Preheat oven to 450 degrees F. Roll pizza crust into a large rectangle, about 14 by 10 inches.
  • Top pizza with barbecue sauce, to within 1/2-inch of the edges. Top with onions, shrimp, bacon, olives, and both cheeses. Bake 10 to 12 minutes, until cheese melts and crust is golden brown.
  • Meanwhile, in a small bowl, whisk together the cider vinegar, olive oil and Dijon mustard. Stir in the raisins and the crumbled blue cheese. Season with salt and pepper and toss with the packaged coleslaw mix in a large bowl. Serve with pizza.

1 cup half & half light cream
3 teaspoons butter
1/2 teaspoon garlic powder
3/4 cup quick-cooking grits
1 small onion, chopped
2 garlic cloves, chopped fine (more cloves if you love garlic)
1 lb uncooked shrimp, peeled and deveined
1/4 cup ketchup
1 tablespoon honey
2 teaspoons lemon juice
1 teaspoon hot sauce (I used more)
1 cup shredded sharp cheddar cheese
salt
pepper

Steps:

  • Bring water, half and half, 1 teaspoon butter, salt, pepper to a low boil. Add grits, reduce heat, simmer uncovered for 5-7 minutes until grits are thickened.
  • Combine ketchup, honey, lemon juice, and hot pepper. Set aside.
  • Meanwhile, saute onion in the rest of the butter until transulent. Add garlic and saute for 2 more minutes.
  • Add shrimp and saute till pink. Be careful not to overcook or they'll be tough.
  • When grits are thickend, add cheese to them. Taste and add salt, pepper if needed. If grits become to thick add a little water or milk.
  • Add ketchup mixture to the shrimp and just heat through.
  • Serve shrimp over grits.

3 tablespoons olive oil
2 lemons, rind and juice
3 green onions, sliced (shallots)
