BEEF AND BEER FONDUE

Beef and Beer Fondue image

I got this recipe from my mother. We always have it at parties. The fondue is a thick, rich, tomato-type fondue. There is no cheese in it and it doesn't need it. The meatballs soak up some of the sauce to make it super yummy! It's always a hit for us, so I thought I'd share.

FONDUE BOURGUIGNONNE

This lighter version of fondue Bourguignonne pan-sears the meat as opposed to the traditional method of frying beef cubes in oil. You can substitute chicken or peeled shrimp for the beef and cook it in the same way until cooked through. Serve with a red wine, such as Burgundy.

MEAT FONDUE

Meat fondue image

Revisit an 80s dinner party classic - the meat fondue. The assembly job can be done before your guests arrive. Make some sauces yourself and buy the rest

Provided by Emma Freud

Categories     Buffet, Dinner, Main course

Time 30m

Number Of Ingredients 4

800g beef tenderloin or 4 rump steaks, cut into 1-inch cubes
1l good vegetable oil
crusty white bread
green salad

Steps:

  • Prepare your sauces (see below) in advance, and put in little bowls around the fondue burner, along with the meat, bread and salad. Season the meat.
  • When your guests are ready to eat, fill your fondue pan half-full of vegetable oil and heat on the hob until it's hot, but not smoking. You're aiming for around 190C, but if you haven't got a thermometer, throw in a cube of bread - when it takes about 30 secs to brown, it's ready.
  • Put the fondue burner on the table carefully so that it's stable, then, following the manufacturer's instructions, light the flame and put the pan on top.
  • Give each guest a fondue fork for dunking the meat in the hot oil. It should take 25-30 secs for rare, 30-35 secs for medium and 45-60 secs for well done. When the meat is cooked, dip it into the sauces, and pile it onto the bread. If you have some raw king prawns to cook in the fondue, they work really well too. CORRECTION NOTICEPlease be informed that in the July issue of BBC Good Food Magazine, it incorrectly stated that the temperature of the oil in this recipe should be 375C, the correct temperature of the oil should be 375 Fahrenheit or 190C. FONDUE BOURGUIGNONNE

Provided by Food Network

Categories     appetizer

Number Of Ingredients 12

4 cups vegetable oil, or mix of vegetable and olive oils
8 ounces beef tenderloin, cut into small cubes or strips
8 ounces chicken breast, boneless and skinless, cut into small cubes or strips
1 tablespoon olive oil
Salt and pepper
3/4 cup ground pork
1/2 teaspoon minced garlic
1 teaspoon minced shallots
1 egg yolk
1 teaspoon mustard
4 small red-skinned potatoes, quartered and cooked until tender
1/2 cup each of 3 sauces (such as Aioli, barbecue sauce, Bearnaise and/or horseradish cream)

Steps:

  • Heat oil in a fondue pot or 2-quart saucepan until very hot (375 degrees). While oil is heating, cut beef and chicken, toss with olive oil, and season with salt and pepper. Combine pork with garlic, shallots, egg yolk and mustard and form into tiny meat balls. Decoratively arrange meats, meatballs and potatoes on a large platter, or on 4 individual plates. Arrange sauces in individual dipping bowls or plates. Place fondue pot of oil in center of table over a small candle or sterno, and adjust flame so that it bubbles but does not sputter when meat is added. Spear meat, meatball or potato on long forks, place in pot and cook 20 to 30 seconds until crispy. Remove meat from fork before eating -- fork will be burning hot. You can use wooden skewers instead of long forks for cooking, if you wish.

FONDUE WITH SEARED STEAK

Fondue with Seared Steak image

Gouda and Gruyere are amped up with white wine, brandy, and freshly grated nutmeg in this ooey gooey fondue.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes

Time 30m

Yield Serves 4 to 6

Number Of Ingredients 14

1 pound sirloin steak, cut into 1 1/2-inch pieces
Coarse salt and freshly ground pepper
1 tablespoon safflower oil
8 ounces young Gouda, rind trimmed, coarsely grated
8 ounces Gruyere, rind trimmed, coarsely grated
2 tablespoons cornstarch
1 clove garlic, halved
1 1/2 cups dry white wine, such as Sauvignon Blanc
1 tablespoon brandy
Freshly grated nutmeg
1 apple, cored and sliced
1 small bulb fennel, cored and cut into wedges
1/2 cup cornichons
1/2 loaf rustic bread, cut into 1-inch cubes

Steps:

  • Season beef with salt and pepper. Heat a heavy skillet over medium-high heat. Swirl in oil. In batches, add beef in a single layer. Cook, turning occasionally, until browned on all sides, about 3 minutes for medium-rare. Transfer to a plate; tent with parchment-lined foil.
  • Toss cheeses with cornstarch in a bowl until coated. Rub bottom and sides of a medium pot with garlic; discard garlic. Add wine and brandy; bring to a simmer over medium-high heat.
  • Reduce heat to medium. Stir in cheese mixture in batches, waiting for cheeses to melt before adding more. Cook, stirring, until melted and smooth, about 10 minutes. Season with nutmeg.
  • Transfer to a fondue pot set over a warmer. Serve with beef, apple, fennel, cornichons, and bread.

Tips:

  • Choose the right cut of beef: A tender cut of beef is essential for a successful fondue. Look for cuts that are well-marbled, such as ribeye, sirloin, or tenderloin.
  • Use a good quality cheese: The cheese is the star of the show in a cheese fondue, so it's important to use a good quality cheese that melts well. A classic choice is Gruyère, but you can also use other types of cheese, such as Emmental, Jarlsberg, or Fontina.
  • Don't overheat the oil: The oil in a fondue should be hot enough to cook the beef, but not so hot that it burns. The ideal temperature for a fondue is between 350 and 375 degrees Fahrenheit.
  • Cook the beef in small pieces: This will help to ensure that the beef cooks evenly and doesn't overcook.
  • Don't overcrowd the fondue pot: If you overcrowd the fondue pot, the beef will not cook evenly and may end up being tough.
  • Serve with a variety of dipping sauces: Dipping sauces can add a lot of flavor to a fondue. Some popular choices include ranch dressing, blue cheese dressing, and barbecue sauce.

Conclusion:

Fondue is a delicious and fun dish that can be enjoyed by people of all ages. It's a great way to entertain guests, and it's also a great way to use up leftover beef. With a little planning and preparation, you can easily make a delicious fondue at home.
