Categories     Dinner, Lunch, Main course, Supper

Time 2h30m

Number Of Ingredients 12

25g butter
2 large onions, sliced into rings
6 garlic cloves, halved
3 tbsp plain flour
600g piece beef skirt or slices of shin, cut into large chunks
2 tbsp olive or rapeseed oil
3 bay leaves
400ml red wine
1 tbsp tomato purée
300ml strong beef stock
250g mushrooms, halved (we used small Portobello mushrooms)
chopped parsley, to serve (optional)

Steps:

  • Heat oven to 150C/130C fan/gas 2. In a large, heavy-based flameproof casserole dish with a lid, melt the butter over a medium heat. Add the onions and garlic, cook for 10 mins until starting to brown, then transfer to a small plate.
  • Put the flour in a large plastic food bag with plenty of black pepper. Add half the beef, shake to coat, then remove, leaving some flour in the bag. Add the rest of the beef and shake to coat in the remaining flour.
  • Heat the oil in the same casserole dish you cooked the onions in (there's no need to clean it first). Add the beef and bay leaves, and fry until the meat is browned all over. Pour in the wine and return the onions to the dish. Add the tomato purée and stock, stir and return to a simmer. Cover with the lid and put in the oven to stew for 1 hr.
  • After 1 hr, add the mushrooms and return to the oven for another hour. Taste the meat - if it's tender, remove from the oven. If it's still a little firm, cook for 30 mins more and test again. Serve scattered with parsley, if you like.

GRANDMA'S GROUND BEEF CASSEROLE

Grandma's Ground Beef Casserole image

As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

SIMPLY THE BEST BEEF LIVER AND ONION CASSEROLE

Simply the Best Beef Liver and Onion Casserole image

This is the only way I'll eat liver. The liver has a nice bacon flavor due to the fact that it is lightly cooked in the bacon fat. It also has Durkee French Fried Onions in it to make it extra yummy. Due to the fact that it is baked in a casserole the liver is kept from drying out. If you like liver, you should definately try this - its a real winner. I usually serve it over cooked rice. Enjoy.

Tips:

  • Choose the right cut of beef: Chuck roast, short ribs, and brisket are all good choices for beef and onion casserole. These cuts are tough, but they become tender when braised in a slow cooker.
  • Brown the beef before braising: Browning the beef before adding it to the slow cooker helps to develop flavor and color. You can brown the beef in a skillet over medium-high heat, or you can use the sauté function on your slow cooker.
  • Use a variety of vegetables: Onions, carrots, celery, and potatoes are all classic vegetables for beef and onion casserole. However, you can also use other vegetables, such as green beans, mushrooms, or zucchini.
  • Season the casserole well: Salt, pepper, garlic powder, and onion powder are all good seasonings for beef and onion casserole. You can also add other herbs and spices, such as thyme, rosemary, or sage.
  • Cook the casserole on low heat: Beef and onion casserole should be cooked on low heat for at least 8 hours. This allows the beef to become tender and the flavors to develop.

Beef and onion casserole is a classic comfort food that is easy to make and always a crowd-pleaser. By following these tips, you can make a delicious and flavorful beef and onion casserole that your family and friends will love.
