1 bag red or yellow pearl onions
2 1/2 pounds beef chuck, cubed for stew
Kosher salt and coarse black pepper
2 tablespoons olive or vegetable oil
2 tablespoons butter
1 head garlic, cloves crushed
2 tablespoons tomato paste
1 cup dry red or white wine
2 cups beef stock
One 15-ounce can stewed tomatoes
Crusty bread for mopping
Chopped fresh parsley, for garnish

Steps:

  • Preheat the oven to 325 degrees F.
  • Bring a saucepot of water to a boil, then boil the onions for 3 to 4 minutes, drain and cool. Squeeze pearl the onions from the skins, pushing with root end facing away from you.
  • Pat the meat dry and sprinkle liberally with salt and pepper. Heat the oil, 2 turns of the pan, in a large Dutch oven over medium-high heat. Add the meat and brown evenly all over, then remove to a plate and lower the heat to medium. Add the butter and melt, then add the garlic and onions. Season with salt and pepper. Cook, stirring, until lightly brown, a few minutes. Stir in the tomato paste and cook for 1 minute, then add the wine to deglaze. Add the beef, stock and tomatoes. Combine and roast, covered, until tender, 2 to 2 1/2 hours. Cool and store for a make-ahead meal. Reheat on the stovetop over medium heat, stirring frequently.
  • Serve with the bread for mopping, and garnish with the parsley.

SCALLOPS WITH BACON AND SCALLIONS

5 slices bacon
Salt and black pepper
18 sea scallops
2 tablespoons extra-virgin olive oil or vegetable oil, 2 turns of the pan
4 scallions chopped
Crab dip, store bought
Asparagus spears, blanched
1 crusty baguette, sliced at bakery counter

Steps:

  • Crisp bacon in frying pan, under broiler or in microwave, whichever you prefer. Work on the dip while bacon cooks. When bacon is crisp, drain and chop. Set aside.
  • Preheat a nonstick pan over high heat for scallops.
  • Season scallops with salt and pepper. To very hot skillet, add 1 tablespoon oil, 1 turn of the pan, then place 9 scallops in the pan, an inch apart. Sear scallops 2 minutes on each side or until caramelized and opaque. Transfer to a platter and cover loosely with foil. Repeat with remaining scallops.
  • To serve, top scallops with chopped bacon bits and scallions by scattering them evenly over the plattered scallops. Place party picks in a shot glass or small dish and set them on/near platter. Place the crab dip on a large serving platter or board and surround with asparagus spears and sliced baguette, for dipping and spreading.

1/4 cup orange marmalade
2 tablespoons light brown sugar
2 tablespoons grated garlic
2 tablespoons Asian sesame oil
1 1/2 tablespoons white sesame seeds

1/2 tablespoon cayenne pepper
24 thin scallions, tops and bottoms trimmed
24 thin asparagus spears, bottoms trimmed
1 pound shaved beefsteak

  • In a large shallow baking dish, whisk the soy sauce with the marmalade, brown sugar, garlic, sesame oil, sesame seeds, pepper and cayenne powder.
  • Bring a large skillet of water to a boil. Add the scallions and cook until bright green, about 30 seconds. Transfer to a plate and pat dry. Add the asparagus and cook until bright green, about 1 minute; transfer to plate and pat dry.
  • Lay a slice of beef on a work surface. Arrange a scallion and an asparagus spear crosswise at a short end and roll up. Add to soy sauce glaze and turn to coat. Repeat with remaining beef rolls.
  • Brush a grill pan with canola oil and heat over high heat until smoking. Working in batches, cook beef rolls until nicely charred all over, about 15 seconds per side. Transfer to a platter or plates.

1 red bell pepper, ribs and seeds removed, cut into thin strips
3 tablespoons soy sauce
1 pound center-cut beef tenderloin or sirloin, cut into 8 slices
Coarse salt and ground pepper
4 scallions, trimmed, sliced very thinly lengthwise, and cut into 2-inch pieces
2 tablespoons rice vinegar
2 teaspoons sugar

Steps:

  • Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add bell pepper, and cook, shaking skillet often, until pepper blisters, 2 to 4 minutes. Stir in 1 tablespoon soy sauce. Transfer to a plate; wipe skillet clean.
