DRY RUB BEEF BRISKET

Dry Rub Beef Brisket image

Spicy and smoky beef brisket. My version has no BBQ sauce added. Keep the dish tightly covered during cooking and don't peek. This prevents the brisket from drying out. If you use a larger or smaller brisket, adjust the cooking time to 1 hour per pound. Cut the brisket against the grain with a sharp knife, or it will be stringy.

For the rub and brisket:
3 tablespoons ground coffee
1 tablespoon coarse salt
1 tablespoon dark brown sugar
2 teaspoons paprika
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon cocoa powder
1 center-cut beef brisket
6 to 8 bacon slices
For the mop sauce:
1 cup red wine
1 cup orange juice
1/3 cup balsamic vinegar
1 cup coffee
1/3 cup Worcestershire sauce
2 tablespoons Tabasco sauce or another hot sauce
2 teaspoons
1 teaspoon freshly ground black pepper
Red-Eye Barbecue Sauce
1 slice bacon, finely chopped
1/2 medium onion, finely chopped
3/4 cup brewed strong coffee or espresso
3/4 cup ketchup
1/4 cup Worcestershire sauce
1/4 cup heavy cream
3 tablespoons brown sugar
2 tablespoons Dijon mustard
Coarse salt

Steps:

  • Make the rub. In a small bowl, combine the ingredients for the rub and whisk to mix. (Break up any lumps with the whisk or your fingers.) Place the brisket in a roasting pan and generously sprinkle on both sides with the rub, using about 3 tablespoons per side and patting it onto the meat with your fingertips. You can cook the brisket right away, but it will be better if you let it cure with the rub in the refrigerator, covered, for 4 hours, or up to a day ahead. Make the mop sauce. Place the beer, cider, vinegar, coffee, stock, oil, Worcestershire sauce, Tabasco sauce, salt, and pepper in a nonreactive bowl and whisk to mix. Taste for seasoning. Cook the brisket until very tender, 5 to 6 hours Red eye bbq sauce Place the bacon and onion in a heavy saucepan cook over medium heat until lightly browned, 3 minutes, stirring often. Stir in the remaining ingredients and gradually bring to a boil. Reduce the heat slightly and simmer the sauce until thick and richly flavored, 10 minutes, whisking from time to time. Correct the seasoning, adding salt and pepper to taste.

Tips for Achieving the Perfect Beef Brisket Rub:

- **Choose the Right Rub Ingredients:** Experiment with various spices, herbs, and seasonings to create a rub that suits your personal taste. Consider flavors that complement beef, such as paprika, garlic, onion, cumin, chili powder, and brown sugar. - **Use Freshly Ground Spices and Herbs:** The stronger aroma and flavor of freshly ground spices will elevate the taste of your rub. Similarly, fresh herbs provide a vibrant flavor compared to dried ones. - **Balance the Rub:** Create a harmonious blend of flavors by incorporating sweet, savory, spicy, and earthy elements. A well-balanced rub will enhance the natural taste of the beef without overpowering it. - **Apply the Rub Liberally:** Use a generous amount of rub to ensure that the flavors penetrate deep into the beef. Massage the rub into the meat, ensuring it covers all surfaces evenly. - **Let the Rub Marinate:** Allow the rub to sit on the beef for an extended period, ideally overnight or up to 24 hours. This allows the flavors to fully absorb into the meat, resulting in a more flavorful brisket. - **Cook the Brisket Properly:** Follow the recommended cooking method and temperature to achieve the desired tenderness and doneness. Use a meat thermometer to ensure the internal temperature reaches the safe minimum of 145°F (63°C) for medium-rare or 165°F (74°C) for medium.

Conclusion:

Creating a delicious beef brisket rub requires careful selection of ingredients, proper technique, and attention to detail. By following these tips and experimenting with different flavors, you can elevate your brisket game and impress your family and friends with a truly mouthwatering dish. The key to a perfect brisket rub lies in balancing the flavors, applying it liberally, and allowing it to marinate for maximum absorption. Remember, practice makes perfect, so don't be afraid to experiment and refine your rub recipe until you find the one that suits your taste buds the best.
