Slow Cooker Beef Soup with Couscous image

This delicious slow cooker recipe has all the rich, savory flavor of a long-simmered beef stew, only it's lighter and more brothy, with fall-apart-tender chunks of beef and an aromatic beef broth made with garlic, onion, carrot, celery, bay leaves, fresh thyme, and a bit of soy sauce, which works to enhance that umami beef flavor.

1 28-oz can diced tomatoes (undrained)
3 tbsp tomato paste
4 cups beef broth
¼ cup soy sauce
2 tbsp fresh thyme leaves (or 2 tsp dried thyme)
2 dried bay leaves
1 small onion, finely chopped
4 garlic cloves, minced
3 large carrots, peeled and finely chopped
2 ribs celery, finely chopped
2 lbs beef chuck roast
½ tsp salt
¼ tsp black pepper
½ cup pearl couscous (also called Israeli couscous)
2 tbsp finely chopped fresh parsley

Steps:

  • In the base of your slow cooker, combine the diced tomatoes and their juice, tomato paste, beef broth, soy sauce, stirring until well mixed. Add the thyme, bay leaves, onion, garlic, carrots, celery.
  • Season the beef all over with salt and pepper; add to the slow cooker, pushing it down to cover with the liquid. Cover and cook on low until the beef is so tender that it can easily be pulled apart with a fork, 9-10 hours (or cook on high for 6-7 hours)
  • Transfer the beef to a large plate or cutting board and use two forks to shred into bite-size chunks, discarding any pieces of fat and gristle. Discard the bay leaves.
  • Stir the pearl couscous into the soup in the slow cooker. Cover and cook until tender, 10-15 minutes. Return the shredded beef to the soup. Add the parsley. Taste and season with more salt and pepper if desired. Serve.

3 carrots, thinly sliced on an angle
1/2 large celery root, peeled and cut into 1-inch chunks (about 2 cups)
3/4 cup pitted prunes, chopped
1 1/4 pounds beef stew meat
1 tablespoon ras el hanout (Moroccan seasoning)
Kosher salt and freshly ground pepper
2 cups low-sodium chicken broth
2 tablespoons tomato paste
1 cup couscous
2 teaspoons harissa paste, plus more for serving
Fresh cilantro, for topping

Steps:

  • Stir the carrots, celery root and 1/2 cup prunes in a 6- to 8-quart slow cooker. Toss the beef with the ras el hanout, 1 teaspoon salt and a few grinds of pepper in a large bowl. Arrange on top of the vegetables. Whisk the chicken broth and tomato paste in a small bowl or liquid measuring cup and pour over the meat and vegetables. Cover and cook on low until the meat is tender, 7 to 8 hours.
  • About 15 minutes before serving, cook the couscous as the label directs.
  • Skim the fat off the top of the stew with a ladle and discard. Stir in the harissa and season with salt and pepper. Divide the couscous and stew among bowls. Top with the remaining 1/4 cup prunes and cilantro; serve with more harissa.

1 lb lean ground beef
1 (14 ounce) can beef broth
1 small green bell pepper, cut into 1/2 inch pieces
1/2 cup pimento stuffed olive, sliced
1/2 medium onion, chopped
2 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon dried thyme leaves
1 1/3 cups water
1 cup uncooked couscous

Steps:

  • Brown beef in a heavy skillet and pour off excess fat.
  • Add broth, pepper, olives, onion, garlic, cumin and thyme.
  • Top with beef, cover and cook on low 4-5 hours until vegetables are tender.
  • Add water to a small sauce pan and bring to a boil.
  • Stir in couscous, remove from heat and cover.
  • After 5 minutes, remove cover and stir with a fork.
  • Spoon couscous on to individual plates and top with the beef mixture.

1/2 cup chopped onion
1 large clove garlic, finely chopped
1 can (15 ounces) tomato sauce
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground red pepper (cayenne)
2/3 cup uncooked couscous
1/2 cup water
Pine nuts, if desired
Fresh cilantro, if desired

Steps:

  • Cut thin slice from stem end of each bell pepper to remove top of pepper; discard. Remove seeds and membranes; rinse peppers.

1 1/2 lbs top round roast
1/2 cup dry red wine
2 tablespoons hoisin sauce
2 cloves garlic, minced or pressed
1/2 teaspoon ground coriander
2 1/4 cups beef broth
1 1/2 cups couscous
1 frozen tiny peas, thawed
1/4 cup sliced green onion

Steps:

  • Place beef in an 8- by 12-inch roasting pan.
  • In a small bowl, mix wine, hoisin sauce, garlic, and coriander; brush evenly over beef.
  • Roast in a 425 degree oven until a meat thermometer inserted in thickest part of roast registers 135 degrees for rare (about 35 minutes; after 25 minutes, check temperature every 5 minutes).
  • During roasting, brush beef 4 times with wine mixture.
  • If pan drippings begin to burn, add 4 to 6 tablespoons water to pan and stir to loosen browned bits.
  • Transfer beef to a board and cover loosely.
  • Combine any remaining wine mixture and all the pan juices, then measure; add enough broth to make 2 1/2 cups total.
  • Pour broth mixture into roasting pan; bring to a boil stirring to loosen browned bits.
  • Add couscous; return to a boil, stirring.
  • Remove pan from heat, cover tightly with foil, and let stand until liquid is absorbed (about 5 minutes).
  • Stir in peas, onions, and any juices that have accumulated around beef.

1 cup dry white wine, such as Sauvignon Blanc

Steps:

  • Season chicken with salt and pepper. In a large skillet, heat oil over medium-high. In batches, cook chicken, skin side down, until skin is golden brown, about 4 minutes.
