Ready, Set, Cook! Reynolds Wrap Contest Entry. Embutido is a Filipino counterpart of meat loaf, although meat roll is more accurate. The dish originally calls for ground pork as its main ingredient, but I decided to use ground beef as a substitute. The result is a much richer and flavorful dish that pairs well with the Peach Sauce.

Steps:
- Beef Embutido.
- 1. Preheat oven to 350 degrees F.
- 2. In a large bowl, mix together ground beef, carrots, onion, red bell pepper, tomato sauce, cheese, pickle relish, garlic, panko, eggs, salt and pepper.
- 3. Mix well.
- 4. Place the Reynold's Wrap Foil on a flat surface. Spray with non-stick spray.
- 5. Place the meat mixture on the foil and flatten, about 1/2 inch thick. Make sure you have enough space on the sides for sealing.
- 6. Place the sliced hotdog and quartered hard boiled egg in the middle of the meat mixture (forming a line).
- 7. Grab one end of the foil and fold over towards the middle covering the hotdog and egg. Press down gently to pack in the meat.
- 8. Grab the other end of the foil and fold again towards the center, forming a cylinder. Try to make your "meat roll" as compact as possible.
- 9. Grab the two ends of the cylinder and give it a twist to seal.
- 10. Do the same for the rest of the meat mixture.
- 11. Place the meat roll on a shallow baking pan.
- 12. Bake in the oven for 1 - 1 1/2 hours, depending on how thick the meat rolls are.
- 13. You can take one meat roll out and open it carefully to check for doneness, or you can use a meat thermometer (160 degrees F).
- 14. Slice diagonally to serve. About 1/2 inch.
- Peach Sauce.
- 1. In a small sauce pan, bring 1 cup of water to a simmer.
- 2. Add sugar while stirring till dissolved.
- 3. Add in peaches, honey, lemon juice, and salt. Stir to coat peaches.
- 4. Bring it to a boil and let it simmer for about 20 minutes.
- 5. Remove from heat and transfer to a food processor or blender (you can also mash the peaches for chunkier sauce).
- 6. Pulse till smooth.
- 7. Add parsley and mix.
- 8. Drizzle some of the sauce on the Embutido. Place the rest of the Peach Sauce in a bowl for extra sauce.
- Serve with rice and your choice of vegetables.

I made it for the first time when I was 14. Carrying on her culinary history, I make it often for my family. The moist texture comes from the ingredients and method of preparation.

- Preheat oven to 300°F Generously grease and flour dust a Bundt pan.
- Peel, core and dice pears and peaches. Put in a bowl and toss with cinnamon and 1/2 cup of the sugar; set aside.
- In large mixing bowl, mix the remaining sugar, oil, honey, lemon juice,and vanilla. In another bowl, stir together flour, baking powder and salt. Add the dry ingredients to the batter alternating with the eggs. Mix well after each addition. Fold in the peaches and pears with their juices. Pour into the prepared bundt pan. Cover tightly with aluminum foil.
- Roll up a piece of aluminum foil to form a ring and place in the bottom of a 12' round cake pan. Place the bundt pan on the foil ring inside the cake pan. Press to level on the foil. Pour 2 cups warm water in the bottom of the cake pan.
- Put in oven. Bake for 2 hours then remove foil cover and test for doneness. If not done, leave foil off and continue baking until the cake tests done.
- Remove from oven and allow to cool 10 minutes. Invert onto serving plate. Serve with a dollup of topping.
- While cake bakes, prepare topping. Put cream and vanilla in a medium bowl. Beat on medium speed until soft peaks form. Add powdered sugar. Beat on slow speed to incorporate and then beat on medium speed until soft peaks form. Cover with foil and refrigerater until ready to serve.

- Tear off and set aside 6 12-inch square pieces of Reynold's Wrap foil to serve as your hobo dinner pouches. Also line a large baking dish or tray with a sheet of foil for easy clean up of any drips.
- Chop vegetables into bite-size pieces and lightly cover with olive oil, salt, and pepper.
- Mince garlic. Cover with salt and smash with blade of knife until forms a garlic-salt paste.
- Mix into ground beef: garlic salt paste, pepper, olive oil, and yellow mustard. Stir until mixed well.
- Form meat into 6 portions 1/4 lb. each and smash into thick burger patties on the foil sheets. Wrap a piece of bacon around each one.
- Place vegetables with bacon burgers and fold the foil corners up to enclose the food in foil pouches.
- Place foil pouches on foil lined baking pan and bake in oven @ 400 degrees for 30 minutes. You'll next drain out excess liquid from the vegetables then return to cook uncovered for another 15 minutes. This will allow vegetables to brown and onions to caramelize.
- Drain water from vegetables by opening one side of each foil pouch, form it into the shape of a spout, and pour out the excess liquid by tilting them over a sink. The foil works great for this step because the tips of the foil at the top of the pouches cool off in seconds and you can hold onto them to drain out the liquid.
- Open the pouches so food is uncovered and return to oven to continue cooking for 15 minutes. If you would like vegetables more browned and bacon crisper, also broil them on high 6 inches from heat for 2-3 minutes.
- These hobo bacon burger dinners are great for eating on the go. The dinners can be stored in the fridge right in the same foil packs they cook in and can be easily transported for picnics and other events. They are also versatile with cooking; prepare the foil packs for cooking ahead of time and then throw them on a grill at a barbeque cookout or tailgate party.
