1 1 1/3 1 -2 large shallot, minced (about 1/3 cup)
3/4 3/4 3/4 cup sliced mushrooms
1/2 1/2 1/2 tablespoon sugar
1/2 1/2 1/2 tablespoon red wine vinegar
2 2 2 large garlic cloves, minced
1/2 1/2 1/2 teaspoon dried thyme
1/2 1/2 1/2 teaspoon dried rosemary
1/2 1/2 1/2 tablespoon flour
3/4 3/4 3/4 cup beef broth
3/4 3/4 3/4 cup good quality dry red wine

salt & freshly ground black pepper
4 tablespoons butter, divided use
4 large garlic cloves, finely minced
1 medium onion, chopped
1 teaspoon dried thyme
1 tablespoon all-purpose flour
2 cups beef broth
2 cups dry red wine

Steps:

  • Cut beef medallions crosswise into 12 equal rounds.
  • Pound beef rounds to flatten to generous 1/4-inch-thick medallions.
  • Season lightly with salt and pepper.
